Protein Walking Tacos
Ingredients
- 1 pound lean ground beef
- 1 packet taco seasoning
- 4-6 small bags of chips (I use Quest Protein Nacho Chips)
- shredded cheese, salsa, lettuce, Greek yogurt or sour cream, pickled jalapenos (and any other desired toppings)
Instructions
- In a skillet over medium heat, cook the ground beef until no longer pink. Drain, if necessary. Sprinkle on taco seasoning and add a few Tablespoons water. Cook for a few minutes, or until thickened.
- To assemble, open the bags of chips and scoop the meat right on top. Add desired toppings, and serve!


Crispy Honey Garlic Salmon Bites
Ingredients
- 1 pound salmon, cut into bite sized pieces
- 1 TBSP cornstarch
- 1 TBSP olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 TBSP soy sauce
- 2 TBSP honey
- 2 cloves garlic, minced
- 1/2 tsp grated ginger
- 2 TBSP water
- 1 tsp sesame seeds
- green onions, rice for serving
Instructions
- Preheat oven or air fryer to 400 degrees. In a large bowl, combine the salmon with the olive oil, cornstarch, salt, and pepper. Cook for 8-10 minutes, stirring halfway through.
- In a saucepan over medium heat, drizzle a little more oil. Cook the garlic and ginger for about 30 seconds.
- Stir in the soy sauce, honey, and water. Simmer for 3-5 minutes, or until thickened.
- Pour over the cooked salmon. Serve immediately over rice. Garnish with sesame seeds and green onion, if desired.


Greek Chicken Gyro Bowl
Ingredients
Greek Chicken
- 1 1/2 pounds chicken breast
- 2 TBSP Greek yogurt
- 1 TBSP olive oil
- 2 tsp lemon juice
- 3 cloves minced garlic
- 1 TBSP dried oregano
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Lemon Potatoes
- 1 pound baby potatoes
- 1 tsp salt
- 1 tsp black pepper
- 3 TBSP olive oil
- 2 TBSP lemon juice
- 3 cloves garlic, minced
- 1 tsp oregano
Toppings
- red onion, sliced
- cherry tomatoes, cut
- cucumber, cut in pieces
- feta
- tzatziki sauce
- warmed pita
Instructions
- In a bowl, combine the greek yogurt, olive oil, lemon juice, minced garlic, oregano, paprika, garlic powder, salt, and pepper. Place the chicken in the marinade. Refrigerate 30 minutes to a few hours.
- Grill, or cook in a skillet until the internal temperature reaches 165 degrees.
- Preheat the oven to 400 degrees.
- In a bowl, toss the potatoes with the salt, pepper, olive oil, lemon juice, garlic, and oregano. Place in a single layer on a sheet pan.
- Bake for 20 minutes. Flip, and bake an additional 10 minutes.
- Serve on a plate or in a bowl with the chicken and toppings.


Egg Roll in a Bowl
Ingredients
- 1 pound ground pork or beef
- 1 TBSP olive oil
- salt and pepper
- 1/2 onion, diced
- 1 medium carrot, grated
- 3 cloves garlic, minced
- 3 cups green cabbage, shredded
- 1 tsp grated ginger
- 1/4 cup soy sauce
- 2 tsp sesame oil
- 1/2 tsp sugar
- sesame seeds for garnish
Instructions
- In a skillet over medium heat, drizzle olive oil. Cook the pork until no longer pink.
- Stir in the onion, carrot and cabbage. Season with salt and pepper. Cook 5-7 minutes.
- Stir in the garlic and cook an additional 30 seconds.
- Add in the soy sauce, ginger, sesame oil, and sugar. Cook an additional 5 minutes.
- Serve with sesame seeds and green onions on top.
