Easy Slow Cooker Birria Tacos (Crispy, Juicy & So Flavorful)

Slow Cooker Birria Tacos

Ingredients
  

  • 3 pound chuck roast
  • salt and pepper
  • 2-4 cups beef broth
  • 6 guajillo peppers, dried
  • 4 ancho peppers, dried
  • 1 onion, quartered
  • 5 cloves garlic
  • 1 tomato (or 1 cup of cherry tomatoes)
  • 1 TBSP lime juice
  • 1 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 12-14 corn tortillas
  • 2-3 cups Monterey jack cheese
  • chopped onions, cilantro, and lime for serving

Instructions
 

  • In a skillet over medium low heat, toast the dried chiles for about 1 minute per side.
  • Cut the tops/stems off of the chiles. Add to a bowl of hot water and let sit for 15 minutes to soften.
  • Add the onion, garlic, and tomatoes to a sheet pan. Place under the broiler for a few minutes, or until everything gets slightly browned.
  • Shake the seeds out of the peppers and add to the blender. Add in the broiled onion, garlic, and tomatoes.
  • Add in the lime juice, cumin, oregano, cinnamon, salt, and pepper. Add a bit of beef broth, if needed. Puree until smooth.
  • Pat the chuck roast dry. Season with salt and pepper on both sides. Sear in a large skillet with some oil over medium high heat for 2 minutes per side.
  • Place in the slow cooker, and pour the chile sauce over the top of the meat.
  • Pour beef broth around the sides, just enough to go half way up the roast.
  • Cook on low for 8 hours. Remove, and shred.
  • Strain the liquid into a large bowl.
  • To assemble the tacos, dip the corn tortillas into the liquid. Fill with some cheese and beef.
  • Cook in a skillet over medium heat for a few minutes per side, or until the cheese is melted and they are crispy on the outside.
  • Serve with onions, cilantro, lime, and more of that liquid for dipping.
