
Let’s make some of my favorite Summer Slow Cooker Dinners! When it’s 80+ degrees outside, I look for any way possible to not turn on my oven and heat up the house any more. The best solution? The slow cooker! Today we are making Slow Cooker Quiche, Slow Cooker Hawaiian Meatballs, Slow Cooker Pizza, Slow Cooker Taco Pasta, and Slow Cooker Lemonade Chicken!


Slow Cooker Quiche
Ingredients
- 2 pie crusts
- 7 eggs
- 1 cup milk or heavy cream
- 1/4 cup red bell pepper, diced
- 1/4 cup green bell pepper, diced
- 1/4 cup onion, diced
- 2 TBSP fresh parsley, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 4 slices bacon, cooked and crumbled
- 8 ounces cheddar cheese, shredded
Instructions
- In a large bowl, combine the eggs and milk. Whisk until smooth. Stir in the bell peppers, onion, bacon, parsley, cheese, salt, and pepper.
- Line the slow cooker with a large piece of parchment paper. Place the pie crusts in the parchment, pressing high up the sides.
- Pour the egg mixture in the crusts, making sure to not pour over the pie crusts.
- Cook on high 2 1/2 hours, or until no longer jiggly in the center and temperature reaches 165 degrees.
- Lift by the parchment to get the quiche out of the slow cooker. Allow to cool for 10 minutes before cutting.


Slow Cooker Hawaiian Meatballs
Ingredients
- 2-3 pounds meatballs (frozen or homemade)
- 1 can pineapple chunks, drained
- 2 cups BBQ sauce
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 TBSP rice wine vinegar
- 1 TBSP grated ginger
- 3 cloves garlic, minced
- chives, for garnish
- rice, for serving (optional)
Instructions
- Place the meatballs and pineapple chunks into the slow cooker.
- In a bowl, combine the BBQ sauce, soy sauce, brown sugar, vinegar ,ginger, and garlic. Pour over the meatballs.
- Cook on high 2-3 hours, or low 5-6 hours.
- Serve over rice, and garnish with chives.


Slow Cooker Pizza
Ingredients
- 1 pound pizza dough
- 1-2 TBSP cornmeal
- 1/2-3/4 cup pizza sauce
- 1 1/2 cups mozzarella cheese
- 1/2 cup parmesan cheese
- desired toppings
Instructions
- Place a large piece of parchment paper into the slow cooker (you want an overhang so you can lift the pizza out).
- Stretch the dough out on a surface sprinkled with cornmeal. Place into crockpot, and press up the sides of the bowl.
- Spread on the pizza sauce, and sprinkle with cheeses.
- Cook on high for about 2 hours. Check at the 1 1/2 hour mark, since all slow cookers are different.
- Lift the pizza out of the slow cooker, and let cool for 5-10 minutes.
- Cut and serve!


Slow Cooker Taco Pasta
Ingredients
- 1 pound lean ground beef, cooked and drained
- 1 bell pepper, diced
- 15 ounce can diced tomatoes
- 1 cup salsa
- 15 ounce can corn, drained
- 1 can black beans, drained
- 4 TBSP taco seasoning
- 2 1/2 cups chicken or vegetable broth
- 12 ounces shell pasta, uncooked
- 1 cup shredded cheddar cheese
- sour cream, chives, cilantro for serving
Instructions
- Place the cooked ground beef into the slow cooker. Season with taco seasoning.
- Add the tomatoes, salsa, corn, bell pepper, and broth.
- Cook on low 5-6 hours, or high 2-3 hours.
- Add in the pasta, and cook 30 minutes more. (Check at 15 minutes to ensure it doesn't overcook)
- Stir in the cheddar cheese. Serve with sour cream or any other desired toppings!


Slow Cooker Lemonade Chicken
Ingredients
- 4 chicken breasts, trimmed
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 6 ounces lemonade concentrate, thawed
- 4 TBSP brown sugar
- 3 TBSP ketchup
- 1 TBSP vinegar
- 2 TBSP water
- 2 TBSP cornstarch
- lemon slices, rice, or mashed potatoes for serving
Instructions
- Place the chicken breast in the bottom of the slow cooker. Season with salt, pepper, and garlic powder.
- Combine the lemonade concentrate, brown sugar, ketchup, and vinegar. Pour over chicken.
- Cook on high for 2-3 hours, or low for 5-6 hours.
- Combine the water and cornstarch. Remove the chicken, and stir into the juices.
- Place the chicken back in and cook on high 30 minutes more.
- Serve with extra lemon wedges over rice or mashed potatoes.
