Slow Cooker Taco Pasta

Ingredients
  

  • 1 pound lean ground beef, cooked and drained
  • 1 bell pepper, diced
  • 15 ounce can diced tomatoes
  • 1 cup salsa
  • 15 ounce can corn, drained
  • 1 can black beans, drained
  • 4 TBSP taco seasoning
  • 2 1/2 cups chicken or vegetable broth
  • 12 ounces shell pasta, uncooked
  • 1 cup shredded cheddar cheese
  • sour cream, chives, cilantro for serving

Instructions
 

  • Place the cooked ground beef into the slow cooker. Season with taco seasoning.
  • Add the tomatoes, salsa, corn, bell pepper, and broth.
  • Cook on low 5-6 hours, or high 2-3 hours.
  • Add in the pasta, and cook 30 minutes more. (Check at 15 minutes to ensure it doesn't overcook)
  • Stir in the cheddar cheese. Serve with sour cream or any other desired toppings!
