Disney's Cuban Sandwich Copycat Recipe

A crispy, melty sandwich with layers of Mojo pork loin, ham, swiss, yellow mustard, and pickles. Inspired by Disney's Caribbean Beach Resort's quick service locations. A perfect sandwich for Summer!

Ingredients

  • For the Mojo Pork:
  • 1 pound pork tenderloin
  • 1/8 cup lime juice
  • 1 cup orange juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup onion, diced
  • 6 cloves garlic, minced
  • For the Complete Seasoning:
  • 1 Tablespoon garlic powder
  • 1 Tablespoon onion powder
  • 1/2 Tablespoon cumin
  • 1/2 Tablespoon coriander
  • 1/2 Tablespoon parsley
  • 1/2 Tablespoon oregano
  • 1/2 Tablespoon salt
  • 1/2 Tablespoon pepper
  • For the Sandwiches:
  • 4 pieces of French bread (cut in 6 inch pieces)
  • 1/4 cup yellow mustard
  • 8 slices swiss cheese
  • 8 slices boiled ham
  • 2 dill pickles, sliced
  • 3 Tablespoons butter, melted
  • 1 teaspoon garlic powder

Directions

  1. Place the pork loin in a deep casserole dish. Using a fork, poke holes in the pork. Combine the remaining marinade ingredients and pour over the pork. Cover with plastic wrap and marinate in the refrigerator for at least 1 hour, even better overnight. 2. Meanwhile, combine all of the complete seasoning ingredients in a bowl or jar. 3. Preheat the oven to 400 degrees F. Drain the pork from the marinade and place on a parchment lined baking sheet. Bake for about 30 minutes, or until the internal temperature reaches 150 degrees F. Let rest for 10 minutes. 4. Slice the pork into 1/8 inch slices. 5. To assemble the sandwiches, spread yellow mustard on both sides of the bread. Place 2 slices of swiss on the bottom pieces of bread. Top with 2 slices of ham, pickles, and 3 to 4 slices of the pork. Top with other half of bread. 6. Preheat a panini press or skillet. 7. Combine melted butter and garlic powder. Spread butter on the bottom of panini press, and place sandwich on top. Brush more melted butter on the top of the sandwich. Press for 5-6 minutes, or until golden brown, crunchy, and melty. Cut in half, and serve!
