Today we are making my recipe for a classic, quick and easy hummingbird cake! This cake is so full of flavor; pineapple, bananas, toasted pecans. It is so tender and perfectly sweet. I keep it simple by doing a one layer cake, but you can easily divide the batter into two pans, or double the recipe to make a layer cake!
Classic Hummingbird Cake

Ingredients
- 2 cups all purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 cup pecans, chopped (plus 1 cup for the topping)
- 1 cup (2-3 ) ripe bananas
- 1 cup crushed pineapple, plus 3 Tbsp. juice from can
- 3/4 cup vegetable oil
- 2 eggs
- 1 tsp. vanilla extract
- For the Frosting:
- 1/4 cup butter, softened
- 1 and 1/4 cups cream cheese, softened
- 1 tsp. vanilla extract
- 3 and 1/2 cups powdered sugar
Directions
- Place the pecans in a nonstick skillet over medium low heat. Allow to cook, stirring occasionally, until browned and fragrant. Set aside in a bowl to cool. 2. Preheat the oven to 350 degrees F. Grease and line a 9 inch cake pan with parchment paper. 3. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Set aside. 4. In a separate bowl, combine the sugars, eggs, oil. Add the bananas, pineapple, pineapple juice, vanilla, and 1 cup of pecans. 5. Pour into the dry ingredients, and gently mix until just combined. 6. Pour into the prepared pan, and bake for 45 minutes to 1 hour, or until a toothpick inserted in the center comes out clean. 7. Let cool in the pan for 10 minutes, and then flip the cake out onto a wire rack. Allow to cool completely before frosting. 8. To make the frosting, mix together the butter and cream cheese until smooth. Add the powdered sugar, one cup at a time, and mix until combined. Add in the vanilla, and beat until smooth. 9. Once the cake is cool, spread the frosting over the top of the cake. Sprinkle the other cup of pecans on top, and serve! * If you want to make this a layered cake, you can divide the batter between 2 cake pans to get 2 thin cakes, or double the recipe. If you decide to make this a layer cake, you will need to double the frosting recipe! *
