
Welcome back to Part 2 of my Fall Slow Cooker Dinners! We have some more hearty, warm, and comforting meals today. We will be making Slow Cooker Chicken Noodle Soup, Slow Cooker Swedish Meatballs, Slow Cooker Beef Stew, Slow Cooker Creamy Pierogis and Sausage, Slow Cooker Beef Ramen, and Slow Cooker Cheesy Chicken and Rice!

Slow Cooker Chicken Noodle Soup
This chicken noodle soup is so quick and easy to get together, and is packed full of flavor and comfort!
Ingredients
- 1 pound boneless, skinless chicken breast
- 1 medium onion, diced
- 1 cup carrots, sliced
- 1/2 cup celery, sliced
- 3 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups chicken broth
- 8 ounces egg noodles, uncooked
- fresh parsley, for garnish
Instructions
- Place the chicken breasts in the bottom of slow cooker. Add in the onion, carrots, celery, and garlic. Pour the chicken broth on top, and add the spices, salt, and pepper.
- Cook on low 6-8 hours or high for 3-4 hours.
- Remove the chicken, and shred or dice. Add back to the soup, along with the egg noodles.
- Cook on low for an additional 15 minutes, or until noodles are tender. Serve with fresh parsley.


Slow Cooker Swedish Meatballs
Tender beef meatballs in a rich, creamy sauce, served over noodles or mashed potatoes!
Ingredients
- 1 1/4 cups beef broth
- 1/2 cup half and half
- 2 Tablespoons cornstarch
- 1 Tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon allspice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 pounds frozen meatballs
- 1/2 cup sour cream
- 2 Tablespoons fresh parsley
Instructions
- In a bowl, combine the broth, half and half, cornstarch, Worcestershire, garlic powder, allspice, Dijon, salt, and pepper.
- Place the frozen meatballs in bottom on slow cooker, and pour the sauce on top.
- Cook on low for 4 hours. Stir in sour cream, and serve with fresh parsley over mashed potatoes or egg noodles.


Slow Cooker Beef Stew
This rich, hearty beef stew is perfect for a chilly Fall evening!
Ingredients
- 2 1/2 pounds beef chuck roast, trimmed and cubed
- 1 packet Onion Soup Mix
- 1 small onion, diced
- 1 1/2 cups carrots, cut in 1/2 inch pieces
- 1 pound baby potatoes, halved or quartered
- 4 cups beef broth
- 1 Tablespoon Worcestershire sauce
- 6 ounces tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 cup water
- 3 Tablespoons cornstarch
Instructions
- Toss the beef cubes with the dry onion soup mix, and place in the bottom of slow cooker.
- Add in the onion, carrots, potatoes, beef broth, Worcestershire, tomato paste, salt, pepper, rosemary, thyme. Cook on low for 8-9 hours, or high for 4-5.
- About 30 minutes before serving, combine the water and cornstarch, and pour over beef stew. Cook the additional 30 minutes to thicken.


Slow Cooker Creamy Pierogis and Sausage
This dish is the perfect balance of smoky, creamy, cheesy. Filled with tender, soft pierogis, it's the ultimate comfort food.
Ingredients
- 1 package cheddar and potato pierogis
- 2 1/2 cups chicken broth, divided
- 1/2 pound kielbasa, sliced into coins
- 1 cup shredded cheddar cheese
- 2 ounces cream cheese
- 1 teaspoon fresh thyme
- salt and pepper, to taste
Instructions
- Place the frozen pierogis in a single layer on bottom of slow cooker. Place the sausage on top, along with 1/2 cup cheddar cheese. Pour on 2 cups of the chicken broth. Stir, and cook on low 5-6 hours, or on high 3-4 hours.
- 30 minutes before serving time, combine 1/2 cup chicken broth with cream cheese, and microwave until the cream cheese is melted, about 1 minute. Pour over the pierogis, and top with remaining 1/2 cup cheddar cheese. Cook the additional 30 minutes or until thickened and melted. Sprinkle fresh thyme to serve.


Slow Cooker Beef Ramen
This brings your dried pantry ramen to the next level by adding beef, veggies, and a flavorful sauce!
Ingredients
- 1 pound ground beef, cooked and drained
- 1 cup carrots, cut into matchsticks
- 2 bell peppers, thinly sliced
- 2 scallions, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup low sodium soy sauce
- 2 Tablespoons brown sugar
- 1 teaspoon ginger paste
- 2 cups beef stock
- 2 packages dried ramen noodles (no seasoning packet)
- sesame seeds and scallions for serving
Instructions
- Place the cooked ground beef in the bottom of a slow cooker. Add in the carrots, bell pepper, and scallions.
- In a small bowl, combine the soy sauce, beef broth, garlic, ginger, and brown sugar. Pour into the slow cooker.
- Cook on low for 4-6 hours.
- About 30 minutes before serving, add in the ramen noodles, and cover. Cook until noodles are tender. Serve with a sprinkle of more scallions and sesame seeds.


Slow Cooker Cheesy Chicken and Rice
This cheesy chicken and rice is the ultimate comfort food. Great for chilly Fall evenings!
Ingredients
- 1 1/2 pounds boneless, skinless, chicken breast, cubed
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 1 cup carrots, cut into 1/2 inch pieces
- 1 1/2 cups white rice
- 4 ounces cream cheese, cubed
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 1/2 cups shredded cheddar cheese
Instructions
- Place the chicken ,garlic powder, thyme, salt, pepper, chicken broth, carrots, rice, and cream cheese into slow cooker. Stir to combine.
- Cook on low for 5-6 hours, or high for 3-4 hours.
- Add in the peas and corn, and sprinkle the cheddar cheese on top. Turn to low and cook an additional 10-15 minutes.
