Slow Cooker Beef Ramen

This brings your dried pantry ramen to the next level by adding beef, veggies, and a flavorful sauce!
- 1 pound ground beef, cooked and drained
- 1 cup carrots, cut into matchsticks
- 2 bell peppers, thinly sliced
- 2 scallions, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup low sodium soy sauce
- 2 Tablespoons brown sugar
- 1 teaspoon ginger paste
- 2 cups beef stock
- 2 packages dried ramen noodles (no seasoning packet)
- sesame seeds and scallions for serving
Place the cooked ground beef in the bottom of a slow cooker. Add in the carrots, bell pepper, and scallions.
In a small bowl, combine the soy sauce, beef broth, garlic, ginger, and brown sugar. Pour into the slow cooker.
Cook on low for 4-6 hours.
About 30 minutes before serving, add in the ramen noodles, and cover. Cook until noodles are tender. Serve with a sprinkle of more scallions and sesame seeds.
