Slow Cooker Beef Ramen

This brings your dried pantry ramen to the next level by adding beef, veggies, and a flavorful sauce!

Ingredients
  

  • 1 pound ground beef, cooked and drained
  • 1 cup carrots, cut into matchsticks
  • 2 bell peppers, thinly sliced
  • 2 scallions, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup low sodium soy sauce
  • 2 Tablespoons brown sugar
  • 1 teaspoon ginger paste
  • 2 cups beef stock
  • 2 packages dried ramen noodles (no seasoning packet)
  • sesame seeds and scallions for serving

Instructions
 

  • Place the cooked ground beef in the bottom of a slow cooker. Add in the carrots, bell pepper, and scallions.
  • In a small bowl, combine the soy sauce, beef broth, garlic, ginger, and brown sugar. Pour into the slow cooker.
  • Cook on low for 4-6 hours.
  • About 30 minutes before serving, add in the ramen noodles, and cover. Cook until noodles are tender. Serve with a sprinkle of more scallions and sesame seeds.
