A Week of EASY Dinners | 7 Quick & Easy Family Friendly Dinner Recipes for Spring!

Today we are making a week of EASY dinner recipes! We all fall into those dinner ruts of making the same things over and over again, so hopefully these recipes can inspire you to mix something new into your dinner rotation. We will be making Oven “Fried” Chicken with Sweet Potato Fries and Coleslaw, Breakfast Puff Pastry Pizza, Chicken Pad Thai, Toasty Ham and Cheese Biscuits, Pastina Limone, BBQ Chicken Nachos, and Orange Marmalade Salmon!

Oven “Fried” Chicken with Sweet Potato Fries and Slaw

Ingredients
  

Classic Coleslaw

  • 1 cup mayonnaise
  • 6 tsp sugar
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 6 TBSP vinegar (apple cider or white)
  • 1 bag coleslaw mix

Sweet Potato Fries

  • 2 large sweet potatoes, cut in 1/4 inch wedges
  • 1 TBSP cornstarch
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 TBSP olive oil

Oven "Fried" Chicken

  • 1 1/2 pounds chicken breast, cut into strips
  • 2 eggs
  • 1 cup flour
  • 2 cups panko breadcrumbs
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 TBSP smoked paprika
  • 1 tsp dried thyme
  • 2 TBSP olive oil
  • 4 TBSP butter

Instructions
 

Coleslaw

  • In a large bowl, combine all ingredients except the coleslaw mix. Fold in the coleslaw mix. Cover and refrigerate at least 1 hour.

Sweet Potato Fries

  • Preheat the oven to 425 degrees. Spread the sweet potato wedges out on a sheet pan lined with parchment paper. (Be sure to not overcrowd them on the pan).
  • Sprinkle the cornstarch and spices on top, and toss to combine. Drizzle the olive oil on top, and toss to combine again.
  • Bake 25 minutes, flipping half way through.

Oven "Fried" Chicken

  • Preheat oven to 425 degrees. Place a baking dish in the oven to preheat.
  • On a plate, combine the panko, flour, and spices. In a bowl, whisk together the 2 eggs. Stir 1/4 cup of the breadcrumb mixture into the eggs. Dip the chicken strips into the egg mixture, then the panko. Set aside.
  • Remove the hot baking dish from the oven, and melt the butter with the oil in the bottom. Place the chicken strips in, leaving room in between each piece. Spray the tops with olive oil or cooking spray.
  • Bake, along with the sweet potato fries, for 20 minutes, flipping half way through.
  • Place on a wire rack to cool for 5 minutes.

Breakfast Puff Pastry Pizza

Ingredients
  

  • 1 puff pastry sheet, thawed
  • 4 eggs, plus 1 for egg wash
  • 6 asparagus spears, chopped
  • 4 slices bacon, cooked and crumbled
  • 1 1/2 cups gruyere cheese
  • salt and pepper, to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Place puff pastry on a parchment lined baking sheet. Brush the egg wash all along the edges.
  • Sprinkle the cheese on top. If you want over easy eggs, make 4 little nests in the cheese and crack the eggs in. If using scrambled, cook the eggs until soft and sprinkle on top.
  • Add the bacon and asparagus. Sprinkle with salt and pepper to taste.
  • Bake for 22-25 minutes, or until golden brown and bubbling.

Chicken Pad Thai

Ingredients
  

  • 8 ounces fettuccine (or flat rice noodles), cooked
  • 1 large chicken breast, cut into 1 inch pieces
  • 1/2 cup onions, diced
  • 2 eggs
  • salt and pepper
  • 1 cup bean sprouts
  • green onions, cilantro, and chopped peanuts, for serving

Pad Thai Sauce

  • 1/4 cup ketchup
  • 2 TBSP fish sauce
  • 2 TBSP brown sugar
  • 1 tsp minced garlic
  • 1 TBSP peanut butter
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • pinch crushed red pepper flakes

Instructions
 

  • Combine all of the sauce ingredients in a bowl. Set aside.
  • Season the chicken with salt and pepper.
  • Heat a drizzle of oil in a large skillet over medium high heat. Add the onions and chicken, and cook about 5-6 minutes, stirring occasionally, or until chicken is cooked through. Remove from pan and set aside.
  • In the same skillet, crack in the eggs and scramble. Once cooked, add the chicken back in along with the cooked noodles, bean sprouts, and sauce. Toss everything together.
  • Garnish with the green onions, cilantro, and peanuts.

Toasty Ham and Cheese Biscuits

Ingredients
  

  • 1 can of 8 raw biscuits, cut in half horizontally
  • 16 thin slices of ham
  • 8 chunks of cheddar cheese
  • 1 egg, whisked

Instructions
 

  • Preheat oven to 400 degrees.
  • Place 2 slices of ham and chunk of cheddar cheese in the center of each biscuit. Crimp together the edges to seal.
  • Brush with egg wash. Bake for 15-20 minutes, or until golden brown and melted.

Pastina Limone

Ingredients
  

  • 5 cups chicken stock
  • 2 cups pastina pasta
  • 2 lemons, zested and juiced
  • 3 TBSP butter
  • 1 cup parmesan cheese
  • 1 cup frozen peas
  • salt and pepper, to taste

Instructions
 

  • In a pot over medium high heat, bring the stock to a boil. Add the pastina, and cook for 6-7 minutes. After 2 minutes of cooking, add in the peas.
  • Remove from heat, and add half the lemon zest, the lemon juice, butter, parmesan cheese, and salt and pepper. Serve with more parmesan and remaining lemon zest for garnish.

BBQ Chicken Nachos

Ingredients
  

  • 3 cups cooked, shredded chicken
  • 2 cups BBQ sauce, plus more for topping
  • 11-15 ounce bag tortilla chips
  • 2 cups monterey jack or cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup diced red onion
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • optional: pickled jalapeno slices, ranch dressing

Instructions
 

  • Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
  • Combine the chicken and BBQ sauce. Set aside.
  • Spread out half the bag of tortilla chips, and sprinkle with 1/4 of the cheese. Top with the remaining chips, and remaining cheese.
  • Add the rest of the toppings. Bake for 10-15 minutes.
  • Drizzle with BBQ and ranch before serving.

Orange Marmalade Salmon

Ingredients
  

  • 2 salmon filets
  • salt and pepper, to taste
  • 1/2 cup orange marmalade
  • 1/2 tsp soy sauce
  • 1/4 cup goat cheese, crumbled

Instructions
 

  • Preheat oven to 400 degrees. Season salmon with salt and pepper.
  • In a small bowl, combine the marmalade and soy sauce. Spread on top of the salmon.
  • Crumble the goat cheese on top.
  • Bake for 12-15 minutes, or until flaky. Serve with rice or potatoes!
