Pad Thai Sauce
1/4cupketchup
2TBSPfish sauce
2TBSPbrown sugar
1tspminced garlic
1TBSPpeanut butter
1tsplime juice
1tspsoy sauce
pinch crushed red pepper flakes
Instructions
Combine all of the sauce ingredients in a bowl. Set aside.
Season the chicken with salt and pepper.
Heat a drizzle of oil in a large skillet over medium high heat. Add the onions and chicken, and cook about 5-6 minutes, stirring occasionally, or until chicken is cooked through. Remove from pan and set aside.
In the same skillet, crack in the eggs and scramble. Once cooked, add the chicken back in along with the cooked noodles, bean sprouts, and sauce. Toss everything together.
Garnish with the green onions, cilantro, and peanuts.
