St. Patrick’s Day Sweets | Easy Desserts

Today we are making 3 St. Patrick’s Day sweets! While these aren’t traditional Irish recipes, they are perfectly themed for a fun St. Patrick’s Day party! We will be making Chocolate Guinness Cupcakes, Irish Potato Candy, and Irish Whiskey Ice Cream.

Chocolate Guinness Cupcakes

Ingredients
  

  • 12 ounces Guinness
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 TBSP vanilla extract
  • 3 eggs
  • 3/4 cup sour cream
  • 3/4 cup cocoa powder
  • 2 cups sugar
  • 2 1/2 cups flour
  • 1 1/2 tsp baking soda

Vanilla Buttercream

  • 1 1/2 cups butter, softened
  • 3 to 4 cups powdered sugar
  • 1 TBSP vanilla extract
  • 2-3 TBSP heavy cream or milk

Instructions
 

  • Preheat the oven to 350 degrees and line 24 cupcake tins.
  • In a large bowl, combine the Guinness, oil, milk, vanilla, and eggs.
  • Stir in the sour cream.
  • In a separate bowl, combine the cocoa powder, sugar, flour, and baking soda.
  • Add the dry ingredients to the wet ingredients.
  • Divide the batter between the 24 cups, filling about 3/4 full. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove to a wire rack and cool completely.
  • For the buttercream, beat the butter until smooth and creamy. Slowly add in the powdered sugar until combined. Stir in the vanilla and heavy cream, until the icing is smooth.
  • Decorate the cupcakes with the buttercream and some fun sprinkles!

Irish Potato Candy

Ingredients
  

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 4 cups powdered sugar
  • 2 1/2 cups sweetened coconut flakes
  • 1 tsp vanilla extract
  • 1 TBSP cinnamon
  • 1/2 cup brown sugar

Instructions
 

  • In a large bowl, whisk together the butter and cream cheese with a hand mixer until smooth.
  • Add in the vanilla, and slowly add the powdered sugar. Fold in the coconut flakes.
  • Refrigerate for at least 1 hour to firm up.
  • In a small bowl, combine the cinnamon and brown sugar. Make 1 inch balls with the coconut mixture, and roll in the cinnamon mixture to resemble potatoes!
  • Store in the refrigerator for up to 1 week.

Irish Whiskey Ice Cream

Ingredients
  

  • 1 1/2 cups heavy cream, cold
  • 1/2 cup milk, cold
  • 3/4 cup sugar
  • 1/4 ounce package gelatin
  • 1/3 cup whiskey
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Place 1/4 cup cold water in a bowl. Sprinkle the gelatin on top and let sit 1 minute. Pour 1/4 cup boiling water on top and stir to combine.
  • In a large bowl, combine the heavy cream, milk, and sugar until the sugar dissolves. Mix in the gelatin mixture. Refrigerate for 2 hours.
  • Add the mixture to the bowl of an ice cream machine, and freeze for about 20 minutes. Pour in the whiskey and vanilla, and continue to freeze an additional 10 minutes or until the consistency of soft serve.
  • Place in an airtight container and freeze.
