Quick and Easy Chicken Cheesesteaks

Today we are making my super quick and easy chicken cheesesteaks! They take under 30 minutes to make from start to finish, everything cooks in one pan, and they are so packed full of flavor with juicy, thinly sliced chicken, sautéed peppers and onions, gooey, melty cheese, and a special mayo. This is definitely a recipe that makes the whole family happy!

Chicken Cheesesteaks

Ingredients

  • 3/4 cup jarred banana peppers, chopped
  • 1/3 cup mayo
  • 2 large chicken breasts, thinly sliced *Semi frozen makes it easier to slice*
  • salt and pepper to taste
  • 1/2 tsp. garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 Tablespoon oil
  • 1 bell pepper, sliced thin
  • 1 onion, sliced thin
  • 4 sub/hoagie rolls
  • 8 provolone cheese slices

Directions

  1. Preheat oven to 400 degrees F. 2. Combine the mayo, banana peppers (and a little brine) in a bowl. Set aside. 3. Drizzle oil in a nonstick skillet over medium heat. 4. Season chicken with salt, pepper, garlic powder, basil, and oregano. 5. Cook the chicken 2-3 minutes per side, or until cooked. Transfer to a plate. Add the peppers and onions to the skillet, and cook until softened, 5-7 minutes. 6. Add chicken back to reheat and set aside. 7. Assemble sandwiches by adding mayo to roll, then 1 slice of American cheese, 1 slice of Provolone, chicken mixture, and another slice of American and provolone. Bake for 5-7 minutes, or until crusty and melty!
