Apple Cider Donuts
Ingredients
- 3 cups apple cider
- 3 1/2 cups flour
- 2/3 cup brown sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 6 TBSP melted butter
- 2 eggs
- oil for frying
Cinnamon Sugar
- 1 cup sugar
- 1 TBSP cinnamon
Instructions
- In a small saucepan, bring the apple cider to a boil. Simmer, and cook until reduced to 1 cup, about 15 minutes. Let cool.
- In a large bowl, combine the flour, brown sugar, baking powder, salt, baking soda, cinnamon, and nutmeg.
- Add the melted butter and eggs to the cooled cider. Pour into the center of the dry ingredients, and mix until combined.
- Refrigerate for at least 1 hour.
- Divide the dough in half. On a lightly floured surface, roll out each to 1/2 inch thick. Cut out rounds. Make a slit in the center of each one, and pull apart to form a donut hole.
- Heat a few inches of oil to 350 degrees. Fry the donuts about 1-2 minutes per side. Toss in a bowl with the cinnamon sugar. Serve warm.
