
Today we are making my pecan snowballs! These beauties are melt in your mouth shortbread, packed full of toasty pecans and rolled in powdered sugar. The perfect addition to any Christmas cookie box!


Pecan Snowballs
Ingredients
- 2 cups pecans
- 1 cup butter, softened
- 1/2 cup confectioners sugar
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 cup confectioners sugar, for rolling
Instructions
- In a food processor, or with a knife, chop up the pecans into very small pieces.
- In the bowl of a stand mixer, cream together the butter, 1/2 cup confectioners sugar, and 1/3 cup sugar.
- Add in the salt and vanilla, and mix until combined.
- Stir in the flour, and then the pecans.
- Wrap and chill for at least 1 hour.
- Preheat oven to 350 degrees. Roll the dough into 1 1/2 inch balls, and place 1 inch apart on a baking sheet.
- Bake for 15-18 minutes, or until puffed and slightly golden.
- Let cool for 5 minutes on the sheet pan, and then roll in confectioners sugar.
- Allow to cool on a wire rack.
