Navy Bean Soup
Ingredients
- 2 ham bones or 2 cups diced ham
- 1 pound dried navy beans, soaked in water overnight
- 1 onion, diced
- 2 stalks celery, diced
- 2 carrots, diced
- 2 TBSP ketchup
- 3 TBSP Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp parsley
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- salt and pepper
- 8 cups chicken broth
Instructions
- In a large Dutch oven or stock pot with a little oil or bacon fat, cook the onions, carrots, and celery until softened, about 5-7 minutes.
- Add in the ham, navy beans, chicken broth, ketchup, Worchestershire sauce, and spices.
- Bring to a boil. Simmer for 1-2 hours, or until beans and vegetables are cooked through.


Poor Man’s Meal
Ingredients
- 1 pound hot dogs or smoked sausage, cut into 1/2 inch rounds
- 1 onion, chopped
- 4-5 potatoes, peeled and diced into 1/2 inch cubes
- 2 TBSP oil or bacon grease
- 1 tsp paprika
- 1 tsp garlic powder
- 1 TBSP Worcestershire sauce
Instructions
- Rinse the potatoes in cold water to remove excess starch.
- In a large pot, saute the onions in oil or bacon grease until softened, about 5-7 minutes.
- Add the hot dogs and cook an additional 3-4 minutes. Stir in the potatoes and 1/2 cup water or broth. Simmer. Reduce heat to low. Cover and simmer for 20-25 minutes. Season with salt, pepper, garlic powder, paprika, and Worcestershire.


Chocolate Wacky Cake
Ingredients
- 1 1/2 cups flour
- 1 cup sugar
- 1/4 cup unsweetened cocoa
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla
- 1 tsp vinegar
- 1/3 cup vegetable oil
- 1 cup water
Chocolate Frosting
- 3 TBSP butter, softened
- 3 TBSP cocoa
- 1 TBSP honey
- 1 tsp vanilla
- 1 cup confectioners sugar
- 3 TBSP heavy cream
Instructions
- Preheat oven to 350 degrees. Line an 8×8 inch pan with parchment paper.
- In a large bowl, combine the flour, sugar, cocoa, salt, and baking soda.
- Add in the vanilla, vinegar, vegetable oil, and water. Stir until combined.
- Pour batter into prepared pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely in pan on a wire rack.
- To make the frosting: Combine the butter, cocoa, honey, vanilla, and confectioners sugar in a bowl. Slowly add in the heavy cream, using a hand mixer to whip it together.
- Spread onto cooled cake.


Egg Balls
Ingredients
- 3 large eggs
- 1 cup breadcrumbs
- 1 cup parmesan cheese
- 1 tsp garlic powder
- 1 tsp parsley
- salt and pepper
- 3 cups marinara sauce
Instructions
- In a large bowl, combine the eggs, breadcrumbs, parmesan, and spices. The dough should be sticky but moldable (like meatballs).
- Form into golf ball sized balls.
- Heat the marinara sauce in a pot over medium heat until simmering. Drop the egg balls into the sauce. Cook for 15 minutes, then turn over and cook an additional 10 minutes. (Add water to the sauce if it becomes too thick).
- Serve with additional parmesan cheese and parsley.
