Swicy Brussel Sprouts
Ingredients
- 1 1/2 pounds brussel sprouts
- 2 TBSP olive oil
- salt and pepper
- 2 TBSP butter
- 1/2 tsp garlic powder
- 2 TBSP maple syrup
- 1 TBSP sriracha sauce
- 1 tsp vinegar
- 1/2 tsp ground ginger
- 1/4 cup candied, or toasted pecans
Instructions
- Preheat oven to 400 degrees.
- Trim and halve clean Brussel sprouts. Toss with oil, salt and pepper.
- Spread on a baking sheet, cut side down. Roast for 20-25 minutes.
- Meanwhile, make the glaze . In a saucepan, combine the butter, garlic powder, maple syrup, sriracha, vinegar, and ground ginger. Simmer for 3-5 minutes, or until slightly thickened.
- Toss the Brussel sprouts in the sauce, and sprinkle with pecans.


Mom’s Broccoli Casserole
Ingredients
- 2 TBSP butter
- 2 TBSP flour
- 1/2 tsp salt
- dash pepper
- 2 cups milk
- 6 cups cooked broccoli (we use steam in bag)
- 2 cups shredded white American cheese
- 1 cup breadcrumbs
- 4 TBSP melted butter
- salt to taste
Instructions
- Preheat oven to 350 degrees.
- In a saucepan over medium heat, melt the butter. Stir in the flour, salt and pepper.
- Add all of the milk. Cook until slightly thickened, about 1 minute.
- While it's cooking, gradually add in the cheese.
- Once thick, stir in the broccoli. Pour into a greased casserole dish.
- Combine the breadcrumbs, melted butter, and some salt and pepper. Sprinkle on top.
- Bake for 20-25 minutes, or until golden brown on top and bubbling.


Melting Potatoes
Ingredients
- 1 1/2 pounds gold potatoes peeled and sliced 1 inch thick
- 4 tablespoons butter melted
- 1 teaspoon fresh thyme chopped
- salt and pepper to taste
- 1 cup chicken or vegetable broth
- 1 tablespoon lemon juice
- 2 garlic cloves minced
Instructions
- Preheat oven to 500 degrees F.
- Toss the potatoes in the melted butter, thyme, salt and pepper. Arrange on a single layer on a baking pan.
- Bake 30 minutes, flipping the potatoes half way through.
- Flip the potatoes again, and add the broth, lemon juice, and garlic. Roast an additional 10 minutes, and serve.


Scalloped Sweet Potatoes
Ingredients
- 5-6 medium sweet potatoes peeled & cut into 1/8 inch medallions
- ¼ cup butter
- ¼ cup brown sugar
- ½ cup water
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ cup chopped pecans
- ½ cup mini marshmallows
Instructions
- Preheat oven to 400°F.
- Peel sweet potatoes, cut them into thin medallions and arrange them in a round, 9 inch baking dish.
- In a saucepan over medium heat, add unsalted butter, brown sugar, water, spices and salt. Cook for a few minutes just to melt everything together.
- Use a pastry brush to evenly distribute ¾ of the sauce onto sweet potatos. Cover baking dish and bake for 45-50 minutes.
- Remove baking dish from the oven and take foil off. Distribute the remaining ¼ of your sauce mixture onto the potato medallions. Sprinkle with chopped pecans and mini marshmallows.
- Place baking dish back into the oven and turn it to the broil setting. Broil for 1-2 minutes to toast the marshmallows.
- Remove from the oven and allow to cool for 10-15 minutes.
