
Today we are making my copycat recipe for the incredible pulled pork nachos at Disney’s Capt. Cook quick service restaurant at the Polynesian Resort. Whether you are a Disney fan or not, these nachos are something special! We start by making crispy fried wonton chips, and top them with sweet and tangy BBQ pulled pork, lots of melty cheese, and a fresh pineapple salsa. Great for after a day at the beach or pool, and very shareable and easy to make!!
Capt. Cook's Pulled Pork Nachos Copycat Recipe

Ingredients
- 1/2 package wonton skins, cut in 1/4’s
- 2-3 cups kettle cooked chips
- 2 cups pulled pork with BBQ Sauce (recipe here)
- 1/4 cup white queso dip
- 1/2 cup shredded cheddar cheese
- 1/2 cup cherry tomatoes, cut in 1/4’s
- 1/2 cup pineapple, diced
- 1/2 cup green bell pepper, diced
- 1/4 cup red onion, diced
- 2 Tablespoons mayo
- 1 Tablespoon Thai sweet chili sauce
- vegetable oil, for frying
Directions
- Heat about 2 inches of vegetable oil in a high walled skillet to 375 degrees. Fry wonton skins in batches for about 2 minutes or until golden brown. Transfer to a parchment lined sheet pan. 2. On a separate parchment lined sheet pan, lay out the kettle chips and wonton chips. 3. Add the warmed BBQ pork, then the white queso, and cheddar cheese. 4. Preheat oven to 350 degrees and cook the nachos until the cheese is melted, about 5 minutes. 5. Combine the mayo and sweet chili sauce in a small bowl. Drizzle over the cooked nachos. 6. Top with the tomatoes, pineapple, bell pepper, and red onion. Serve immediately, and enjoy!
