We will be making the fluffiest Homemade Marshmallows, sweet, tart, spiced Christmas Jam, decadent Chocolate Fudge, and beautiful Cinnamon Bread!

Cinnamon Bread

Servings 6 small loaves

Ingredients
  

  • 2 cups sugar
  • 4 cups flour
  • 2 TBSP baking powder
  • 1 tsp salt
  • 2 eggs
  • 2 cups milk
  • 2/3 cup vegetable oil

Topping

  • 1 cup sugar
  • 1 TBSP cinnamon

Instructions
 

  • Preheat oven to 350 degrees. Grease 6 5 inch mini loaf pans, or 2 regular loaf pans.
  • Whisk together the sugar, flour, baking powder, and salt.
  • In a separate bowl, combine the eggs, milk, and vegetable oil. Add the dry ingredients, and whisk until combined.
  • Pour batter into pans 2/3 of the way full.
  • In a small bowl, combine the sugar and cinnamon. Spoon on top of the loaves. Use a knife to swirl the mixture into the bread, leaving a little bit on top.
  • Bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.

Easy Chocolate Fudge

Ingredients
  

  • 3 cups semi sweet chocolate chips
  • 14 ounces sweetened condensed milk
  • 2 TBSP butter
  • toppings (sprinkles, nuts, crushed candy canes)

Instructions
 

  • In a saucepan over medium low heat, combine the chocolate chips, sweetened condensed milk, and butter. Stir, cooking until everything is melted.
  • Line an 8×8 inch pan with parchment paper. Pour the melted chocolate mixture into the pan, and smooth until even. Add any toppings you'd like.
  • Refrigerate for at least 3 hours before slicing.

Christmas Jam

Ingredients
  

  • 12 ounces fresh cranberries
  • 8 ounces strawberries, cut in half
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ground ginger
  • 1 cup brown sugar

Instructions
 

  • Combine all ingredients in a slow cooker.
  • Cook on high for 4 hours.
  • Using a stick blender, puree slightly to make it slightly smooth. Add to glass jars, and cool.

Homemade Marshmallows

Ingredients
  

  • 1/4 cup cornstarch
  • 1/4 cup confectioners sugar
  • 3 packets gelatin
  • 1 cup cold water, divided
  • 1 1/2 cups sugar
  • 1/2 cup light corn syrup
  • 1/4 tsp salt
  • 1 tsp vanilla

Instructions
 

  • In a bowl, combine the cornstarch and powdered sugar.
  • Grease a 9×13 inch baking pan. Sprinkle 1/3 of the cornstarch mixture into the pan and coat all sides.
  • In a stand mixer fitted with the whisk attachment, pour 1/2 cup cold water in the bowl. Sprinkle the gelatin on top, and let stand 5 minutes.
  • In a saucepan, combine the sugar, corn syrup, 1/2 cup water, and salt. Cover, and bring to a light simmer.
  • Uncover, and cook until the mixture reaches 240 degrees (6-7 minutes).
  • Turn the mixer onto low speed and slowly add the hot mixture down the side of the bowl.
  • Turn the mixture speed up to high, and whip until the mixture in thick and the bowl is lukewarm to the touch (about 13-14 minutes).
  • Pour into the prepared pan, and dust with more of the cornstarch mixture.
  • Let sit uncovered at room temperature for at least 3 hours.
  • Dust a cutting board with some more cornstarch, and turn out the marshmallows.
  • Cut into squares, or use festive cookie cutters. Dust all sides of each marshmallow in the cornstarch mixture. Store in an airtight container.
