Ultimate Fall Breakfast: Fluffy Pumpkin Pancakes

There is nothing quite like a warm, fluffy stack of pancakes on a crisp fall morning! So today I am showing you a twist on the classic breakfast and making the most delicious pumpkin spice pancakes!

Pumpkin Pancakes

Ingredients
  

  • 1 1/2 cups flour
  • 6 TBSP brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 3/4 cup pumpkin puree
  • 1 1/2 cups milk
  • 2 eggs
  • 3 TBSP vegetable oil
  • 1/2 tsp vanilla extract
  • whipped cream and caramel, for serving

Instructions
 

  • In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  • In a separate bowl, combine the pumpkin, milk, eggs, vegetable oil, and vanilla. Pour into the dry ingredients and whisk to combine. Let sit for 5 minutes while the pan heats up.
  • Place a nonstick skillet over medium low heat. Add butter or oil, if desired. Pour 1/3 cup batter for each pancake into the pan. Cook until the bubbles form and pop on the surface, about 1-2 minutes. Flip, and cook an additional minute.
  • Repeat with remaining batter. Serve with whipped cream and caramel sauce!
