Today we are making my quick and easy cheeseburger casserole! Chock full of seasoned ground beef, ketchup, mustard, diced tomatoes, and gooey melty cheese over spiral rotini pasta, with all of the nooks and crannies that catch all the goodness. Topped with more ketchup and diced dill pickles? Perfection.

Quick & Easy Cheeseburger Casserole

Ingredients
- 8 ounces rotini pasta, cooked
- 1 teaspoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 pound lean ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 Tablespoons ketchup (plus more for serving)
- 14 ounce can diced tomatoes
- 2 Tablespoons mustard
- 3 cups grated cheddar cheese
- 1/2 cup diced pickles
Directions
- Preheat the oven to 350 degrees F. 2. Grease a 13×9 inch casserole dish. 3. In a large skillet, heat the oil over medium high heat. Add the onions and cook 3-4 minutes. 4. Add in the garlic, cook an additional minute, and then add in the ground beef. 5. Season with salt and pepper. 6. Drain the beef mixture, if needed. 7. Return to heat and add in the ketchup, mustard, and tomatoes. Simmer until thickened, about 5 minutes. 8. Add the cooked pasta to the casserole dish, and pour the beef mixture on top. Give a good stir. 9. Top the casserole with the cheddar cheese, and bake for about 15 minutes, or until the cheese is melted. 10. Serve with chopped pickles and ketchup.
