Today we are making one of my favorite Disney snacks that I have been craving lately…Gaston’s Tavern Giant Cinnamon Rolls from Magic Kingdom in Disney World! Even if you’ve never tried them or you’re not a Disney fan, you will LOVE these. They are so soft, buttery, filled with tons of cinnamon and covered in ooey gooey cream cheese frosting and butterscotch drizzle. You can also make these regular sized for a shareable treat, and they’re great for a cozy Fall brunch!
I used Ashley Craft’s amazing recipe to make these (linked below), and while they are delicious, I had some difficulty with the rolls collapsing on me and spreading out. After doing some research and reading from commenters with similar issues, I found that you would need a very high walled pan to bake these, so I decided to try again after dividing the recipe in half, and they turned out much better!

Gaston's Tavern Giant Cinnamon Rolls
Ingredients
- 1/4 cup butter, melted (plus 2 Tbsp. for topping)
- 3/4 cup whole milk
- 3 and 1/4 cups flour, divided
- 1 packet active dry yeast
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 cup water, room temperature
- 1 large egg
- For the Filling:
- 1 cup brown sugar
- 1/2 cup butter, softened
- 1 Tablespoon cinnamon
- For the Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 2 Tablespoons butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 and 1/2-2 Tbsp. heavy cream
- pinch salt
- Butterscotch Sauce:
- 1/4 cup brown sugar
- 2 Tablespoons butter, softened
- 1/4 cup heavy cream
- 1/8 teaspoon salt
- 1/2 teaspoon vanilla extract
Directions
- In a bowl, combine the 1/4 cup melted butter and milk. 2. In the bowl of a stand mixer, combine 1 and 1/2 cups flour, yeast, sugar, salt, water, egg, and butter mixture. Using the paddle attachment, stir to combine. 3. Replace with the dough hook attachment, and add remaining flour, stirring, until a ball forms and cleans the sides of the bowl. (About 5 minutes). 4. Place in a clean, greased bowl, cover, and let rise for 1 hour. 5. Meanwhile, combine the filling ingredients in a small bowl, set aside. 6. Roll out the dough on a lightly floured surface into a rectangle, about 1/4 inch thick. 7. Spread the filling on the dough. 8. Starting with the short end, roll the dough up into a log shape, pinching the seam together to seal. 9. Cut the dough in half, and trim the ends off of either side. Place in 13×9 greased baking dish, cut side down. 10. Drizzle remaining 2 Tablespoons of butter on top. Cover, and let rise an additional hour. 11. Bake at 375 degrees F. for 20-25 minutes, then place foil on the dish and bake an additional 10 minutes, or until golden brown and bubbling. 12. To make the cream cheese frosting: Heat the butter and cream cheese in the microwave for 30 seconds until softened and melty. Add in the powdered sugar, vanilla, heavy cream, and salt. Whip together until smooth. 13. To make the butterscotch sauce: In a small saucepan over medium low heat, combine the butter and brown sugar until melted and starting to simmer. Add in the vanilla, salt, and heavy cream. Bring to a boil for 1 minute, or until thickened. 14. Drizzle the cream cheese frosting and butterscotch sauce on top of the cinnamon rolls, and serve!
