
Willkommen! I LOVE a good Oktoberfest celebration, and while we used to go locally, I thought it would be fun to bring it into our own home this year. Today, I’m going to show you how to make a complete Oktoberfest meal that is hearty, delicious, and perfect for sharing with family and friends!


Classic Apple Strudel
Ingredients
- 1 sheet puff pastry, thawed
- 3 apples, peeled, cored, and diced
- 1 tsp cinnamon
- 2 TBSP sugar
- 4 TBSP raisins
- 3 TBSP breadcrumbs
- 3 TBSP brown sugar
- 1 egg
- powdered sugar, for dusting
Instructions
- Preheat oven to 400 degrees.
- In a bowl, combine the apples, cinnamon and sugar. Fold in the raisins, and set aside.
- In a separate bowl, combine the breadcrumbs and brown sugar.
- Place the puff pastry on a sheet of parchment paper. Spread the breadcrumb mixture on top, leaving a 1 inch border around the edges.
- Spread the apple mixture on 1/3 of the puff pastry. Roll up into a sausage shape. Brush egg wash on the edge and pinch to seal. Brush egg wash on the ends, and tuck them under the roll to seal.
- Cut a few slits on the top of the roll, and brush with egg wash.
- Bake for 25-30 minutes, or until golden brown.
- Once cooled, dust with powdered sugar.


Big Soft Pretzels
Ingredients
- 1 1/2 cups warm water (about 100-110 degrees F)
- 1 TBSP sugar
- 2 tsp salt
- 1 packet active dry yeast
- 4 1/2 cups flour, plus more for dusting
- 2 ounces butter, melted and cooled
- 10 cups water
- 2/3 cup baking soda
- 1 egg yolk, beaten with 1 TBSP water
- pretzel salt
Instructions
- In a large bowl of a stand mixer, combine the water, sugar and salt. Sprinkle the yeast on top, and let sit for 5 minutes, or until it begins to foam and bubble.
- Add the flour and butter. Using a dough hook, mix until combined. Turn the speed to medium and let knead until smooth and it pulls away from the side of the bowl. (About 5 minutes). If it's still sticky, add 1/2 cup more flour.
- Remove the dough from bowl and transfer to a large, greased bowl. Cover with plastic wrap and a towel. Allow to rise until doubled in size, about 1 hour.
- Turn the dough out onto a floured surface. Divide into 8 equal pieces.
- Roll each dough out into a 24 inch rope, and form into a pretzel shape by creating a U, twisting the ends together, and then pressing into the bottom of the U.
- Bring the 10 cups of water and baking soda to a boil in a large pot.
- Preheat oven to 450 degrees.
- Boil the pretzels for 30 seconds at a time, and transfer to a parchment lined baking sheet.
- Brush with the yolk mixture, and sprinkle on the pretzel salt.
- Bake for about 12-15 minutes or until golden brown.


Creamy Beer Cheese Dip
Ingredients
- 4 TBSP butter
- 1/4 cup flour
- 1 cup milk
- 1/2 cup beer
- 1 tsp Worcestershire
- 1/2 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/2 tsp salt
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup gouda cheese, shredded
Instructions
- In a saucepan over medium low heat, melt the butter. Whisk in the flour and cook for 30 seconds. Slowly add in milk, and stir to combine.
- Turn the heat down to low and add in the beer slowly. Add in remaining ingredients, add cheese in small batches, until melted.
- Cool slightly, and serve with pretzels!


German Potato Salad
Ingredients
- 2 pounds gold potatoes
- 6 slices bacon, cooked and chopped
- 1 small onion, grated
- 1/2 cup chicken broth
- 1/4 cup vegetable oil
- 1/4 cup vinegar
- 2 TBSP Dijon mustard
- 1 TBSP sugar
- salt and pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Place the whole potatoes in a pot and fill with water. Add some salt. Bring to a boil and cook for about 15-20 minutes, or until potatoes are tender and cooked through.
- Peel the potatoes and slice them into 1/4 inch slices.
- Add the bacon and onions.
- In a bowl, combine the chicken broth, oil, vinegar, Dijon, sugar, salt and pepper. Pour over the potatoes and stir to combine.
- Sprinkle on the parsley. Serve warm or cold.


Currywurst
Ingredients
- 4-5 bratwurst, cooked and sliced into coins
- 1 cup ketchup
- 2 TBSP curry powder
- 1/4 cup vinegar
- 1/2 cup brown sugar
- 2 tsp Worcestershire
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 2 tsp salt
- 1 tsp dried mustard
- 1 bag frozen fries, cooked according to package directions
Instructions
- In a pot over medium heat, combine the ketchup, curry powder, vinegar, brown sugar, Worcestershire, smoked paprika, salt, garlic powder, and dried mustard. Cook for about 5-10 minutes, or until combined and thickened.
- Place the fries in a paper boat or plate. Place sausage on top, and drizzle on the curry ketchup.
