Place the whole potatoes in a pot and fill with water. Add some salt. Bring to a boil and cook for about 15-20 minutes, or until potatoes are tender and cooked through.
Peel the potatoes and slice them into 1/4 inch slices.
Add the bacon and onions.
In a bowl, combine the chicken broth, oil, vinegar, Dijon, sugar, salt and pepper. Pour over the potatoes and stir to combine.
