A Mother’s Day Picnic Menu

Today we are making a fun picnic menu for Mother’s Day that is not only delicious, but easy enough that the kids can get involved and help make a special meal for Mom. We will be making Chocolate Strawberry Trail Mix, Turkey Cranberry Croissant Sandwiches, and Salad in a Cup. Don’t forget her favorite tasty beverage too!

Chocolate Strawberry Trail Mix

Ingredients
  

  • 1 cup dark chocolate chunks
  • 3 cups cashews
  • 1 cup pretzels
  • 2 cups freeze dried strawberries

Instructions
 

  • Combine all ingredients in a bowl . Store in an airtight container.

Turkey Cranberry Croissant Sandwiches

Ingredients
  

  • 4 ounces cream cheese, softened
  • 1/3 cup dried cranberries
  • 2 TBSP green onions, diced
  • 4 croissants (or 2 large)
  • 1/2 pound honey turkey
  • salt and pepper

Instructions
 

  • In a bowl, combine the cream cheese, dried cranberries, green onions, salt and pepper.
  • Cut the croissants in half. Spread the cream cheese mixture on both sides.
  • Divide the turkey between the croissants. Serve!

Notes

Can be made the day beforehand. Wrap tightly in plastic wrap. Take out 15 minutes before serving to take the chill off.

Salad in a Cup

Ingredients
  

  • 4 TBSP dressing of your choice
  • 2 cups cut up veggies of your choice onions, peppers, cucumbers, carrots
  • 4 TBSP shredded cheese, optional
  • 4 cups lettuce
  • 4 plastic cups with lids

Instructions
 

  • Start by drizzling the dressing in the bottom of the cups. Next, add on the chopped veggies, then cheese and lettuce last. When ready to serve, shake the cup to mix it all together, and enjoy!
