Easy Homemade Chicken Stock | Liquid Gold!

We are officially entering soup season! There is nothing quite like a warm, comforting bowl of soup on a chilly day. And the secret to a really great soup, is the stock! So today I am going to show you how to make the most delicious, nutritious, flavorful stock right in your own kitchen! It’s so easy, so simple, and it will elevate every dish you make!

Easy Homemade Chicken Stock

Ingredients
  

  • 1 to 2 roasted chicken carcasses
  • any leftover chicken drippings optional
  • 1 large onion quartered
  • 4-5 cloves garlic crushed
  • 1 cup carrots
  • 1 cup celery
  • 1/2 cup fresh parsley sage, rosemary, thyme bunches or anything extra you have on hand
  • 10 whole peppercorns
  • water to cover (about 4 or 5 quarts)

Instructions
 

  • In a large pot, combine all of the ingredients and cover with water. (It’s okay if some things are sticking out at first).
  • Place on the stove over high heat, and bring to a rolling boil. Reduce the heat to low, and simmer the stock for 2-4 hours. (The longer the richer the stock).
  • Pour through a fine mesh strainer, and cool.
  • I like to divide mine into mason jars and pop them in the freezer for an easy starter for any soup!
