Today we are making a menu themed all around the movie, Home Alone! We will be making Kevin’s Popcorn, Uncle Frank’s Little Shrimps, “Highly Nutritious” Macaroni and Cheese Balls, A Lovely Cheese Pizza, Just For Me, and Rubbish Sundaes. Served with Fuller’s Pepsi, and First Class Champagne!

Kevin’s Popcorn

A homemade movie theater style popcorn, perfect for munching and jumping on the bed!
Cook Time 10 minutes
Course Appetizer
Servings 6

Ingredients
  

  • 3 Tablespoons oil (coconut or vegetable)
  • 1/2 cup popcorn kernels
  • 4 Tablespoons butter, melted
  • 1/2 teaspoon salt

Instructions
 

  • In a large stock pot, heat the oil, and add 3 kernels to the pot (these are the test kernels). Cover with a lid. Once the 3 kernels start popping, add the 1/2 cup kernels and cover.
  • Shake the pan occasionally, and once half the popcorn is popped, crack the lid to allow steam to escape.
  • Immediately pour popcorn into a large bowl. Drizzle on butter, stirring. Sprinkle on salt, stir, and serve!

Uncle Frank’s Little Shrimps

Classic shrimp cocktail in honor of Uncle Frank!

Ingredients
  

  • 1 pound jumbo shrimp, deveined (peel and tail still on), thawed
  • 1/8 cup salt
  • 1/8 cup sugar

Cocktail Sauce

  • 1/2 cup ketchup
  • 1 1/2 Tablespoons horseradish
  • 1/4 teaspoon lemon zest
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Worcestershire
  • dash hot sauce

Instructions
 

  • In a small bowl, combine all of the ingredients for the cocktail sauce, and set aside.
  • In a large pot, add 6 cups water, salt, and sugar. Bring to a boil.
  • On the side, fill a bowl with ice water.
  • Boil the shrimp for 3 1/2-4 minutes. (The water may not come to a rolling boil again, and that's okay).
  • Remove the shrimp and plunge in ice water. Let sit for 15 minutes.
  • Peel the shrimp, and serve with cocktail sauce.
  • *If leaving out at a party as an appetizer, or not eating immediately, put the shrimp on ice to keep cold*

“Highly Nutritious” Macaroni and Cheese Balls

Kevin's microwave macaroni and cheese, turned into fried melty goodness!

Ingredients
  

  • 3-4 cups cooked macaroni and cheese, cold
  • 2 cups shredded cheddar
  • 2 eggs
  • 1/4 cup milk
  • 1 cup flour
  • 2 cups breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • oil, for frying

Instructions
 

  • Combine the macaroni and cheese with cheddar. Roll into 2 inch balls.
  • Combine the eggs and milk in a bowl, and place flour on a plate. Place the breadcrumbs on a separate plate and season with salt and pepper.
  • Dip the balls in flour, then egg mix, then breadcrumbs. Set aside on a tray.
  • Heat oil for 350 degrees in a shallow pot. Fry the cheese balls about 3-4 minutes, turning to brown all sides.

A Lovely Cheese Pizza, Just for Me

Ingredients
  

  • 2 pizza doughs, cut in half
  • 2 cups pizza sauce
  • 4 cups shredded mozzarella

Instructions
 

  • Preheat oven to 425 degrees.
  • Stretch out the 4 doughs and place on parchment lined baking sheets.
  • Spread the sauce on the doughs, and sprinkle on cheese.
  • Bake for 20 minutes, or until golden brown and cheese is melted.

Rubbish Sundaes

"I'm eating junk and watching rubbish, you better come out and stop me!"

Ingredients
  

  • 4-6 cups ice cream (a few different flavors is fun)
  • whipped cream
  • hot fudge sauce
  • maraschino cherries
  • mini marshmallows

Instructions
 

  • Make a sundae bar by having all of the ingredients out on the table. Everyone can make their own!
