
Today we are making my Hot Cocoa Cookies. They are fudgy, chewy, soft chocolate cookies topped with melty, toasted marshmallows and melted chocolate. One of my most requested cookie recipes from friends and family!


Hot Cocoa Cookies
Ingredients
- 1/2 cup butter
- 12 ounces semi sweet chocolate, DIVIDED squares, chips, or mini chips
- 1 1/4 cups brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/4 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- mini marshmallows, for garnish
Instructions
- In a saucepan or microwaveable bowl, melt the chocolate and the butter together, stirring to ensure the chocolate doesn't burn. Set aside to cool slightly.
- In the bowl of a stand mixer, mix the brown sugar, vanilla, and eggs until well combined. Add in the melted chocolate and butter. Mix to combine.
- In a large bowl, combine the flour, baking powder, cocoa, and salt. Pour into the wet ingredients and stir to combine.
- Cover and chill dough for at least 2 hours.
- Preheat oven to 325 degrees. Roll the dough into 1 inch balls and space 2 inches apart on parchment lined baking sheets.
- Bake about 10 minutes, or until the tops start to crinkle.
- Add some more chocolate to the tops of each cookie, along with a few mini marshmallows. Place back in the oven for 3-4 minutes, or until marshmallows are puffed and slightly toasted.
- Allow to cool on baking sheet for 5 minutes, and then transfer to a wire rack to cool. Top with more chocolate chips if desired.
