
If you like chocolate covered cherries, then you will LOVE these cookies! Buttery, flaky shortbread chock full of sweet maraschino cherries and mini chocolate chips. Not only are they absolutely delicious, but they are festive as well!

Maraschino Chip Cookies
Shortbread cookies with maraschino cherries and mini chocolate chips
Ingredients
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1/2 Tablespoon vanilla extract
- 2 cups flour
- 1/2 teaspoon salt
- 1 cup maraschino cherries, drained, chopped, and patted dry
- 2/3 cup mini chocolate chips (or chopped chips)
Instructions
- In the bowl of a stand mixer, cream together butter and sugar until light and fluffy. Add in the vanilla, and stir to combine.
- Add in the flour and salt, and stir until incorporated.
- Stir in the cherries and chocolate chips by hand.
- Form into a 3 inch diameter log and wrap in plastic wrap. Refrigerate for at least 2 hours, or until firm.
- Preheat oven to 350 degrees.
- Cut into 1/4 inch slices. Place on parchment lined baking sheets about 2 inches apart. Bake for 10-12 minutes. Cool on the pan for 5 minutes before transferring to a wire rack.
