Today we are making a traditional family recipe for this incredible, classic Irish apple cake with custard sauce. This is a favorite in my household not just for St. Patrick’s Day, but all year long. It is incredibly moist, flavorful, and just slightly sweet. Pairs beautifully with a nice cup of coffee or tea. We also like to serve it with caramel sauce and ice cream instead of the custard sauce!

Irish Apple Cake

Ingredients
- 3 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup cold butter (1 stick)
- 3/4 cup sugar (plus 2 teaspoons for the top)
- 4 granny smith apples, peeled, cored, and chopped into 1 inch cubes
- 1 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- For the Custard Sauce:
- 3 egg yolks
- 1/4 cup sugar
- 3/4 cup milk
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 375 degrees F. Grease a 8 or 9 inch spring form pan. 2. Combine the flour, baking powder, salt, cinnamon, nutmeg. 3. Grate the cold butter into the bowl, (or cube and cut the butter in). Add in the sugar and stir to combine. Toss in the apples until coated. 4. Combine the milk, eggs, and vanilla. Pour into the dry ingredients and stir to combine. The batter will be VERY thick (the apples release a lot of liquid while cooking). 5. Transfer to the greased pan, and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. 6. Allow to cool in the pan for 10 minutes, and then remove the sides and place on a cooling rack. We like to serve ours with ice cream and caramel sauce, but the traditional custard sauce is also delicious!
- To make the custard sauce, combine the egg yolks and sugar in a bowl. 8. Add the milk to a small saucepan over medium heat, and bring to barely a simmer. 9. Slowly pour the milk into the egg mixture, whisking quickly to temper the eggs. 10. Add all back to the saucepan, and cook over low heat until thickened, about 4 minutes. Stir in the vanilla. Pour over a fine mesh sieve to ensure there are no lumps, and serve over slices of cake.
