Day 8: Chocolate Peppermint Pinwheels | 12 Days of Christmas Cookies

These chocolate peppermint pinwheels are the perfect combination of soft cocoa cookies and chewy, peppermint sugar cookies! The candy canes caramelize in the dough and add a wonderful texture.

Chocolate Peppermint Pinwheels

Ingredients
  

Sugar Cookie Dough

  • 3 cups all purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 Tablespoon milk

Chocolate Add ins

  • 3 ounces unsweetened chocolate, melted
  • 1 teaspoon vanilla extract

Peppermint Add ins

  • 1 egg yolk
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed candy canes

Instructions
 

  • To Make the Sugar Cookies: Cream together the butter and sugar. Add in the egg and milk. In a separate bowl, combine the flour, baking powder, and salt. Add to wet mixture and mix until combined.
  • Divide the dough in half. To one half, add in the chocolate and vanilla extract. Knead into the dough on a nonstick mat until incorporated.
  • To the other half of the dough, knead in the egg yolk, peppermint extract, and crushed candy canes.
  • Roll out both doughs into a rectangle a 1/4 inch thick.
  • Place the peppermint dough on top of the chocolate, and roll into a log. Wrap and chill for at least 2 hours.
  • Preheat the oven to 375 degrees. Cut the dough into 1/2 inch slices. Place on a baking sheet 1 inch apart.
  • Bake for 12-15 minutes, or until slightly golden and set. Cool on the pan for 5 minutes before moving to a wire rack.
