
These chocolate peppermint pinwheels are the perfect combination of soft cocoa cookies and chewy, peppermint sugar cookies! The candy canes caramelize in the dough and add a wonderful texture.


Chocolate Peppermint Pinwheels
Ingredients
Sugar Cookie Dough
- 3 cups all purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 Tablespoon milk
Chocolate Add ins
- 3 ounces unsweetened chocolate, melted
- 1 teaspoon vanilla extract
Peppermint Add ins
- 1 egg yolk
- 1 teaspoon peppermint extract
- 1/2 cup crushed candy canes
Instructions
- To Make the Sugar Cookies: Cream together the butter and sugar. Add in the egg and milk. In a separate bowl, combine the flour, baking powder, and salt. Add to wet mixture and mix until combined.
- Divide the dough in half. To one half, add in the chocolate and vanilla extract. Knead into the dough on a nonstick mat until incorporated.
- To the other half of the dough, knead in the egg yolk, peppermint extract, and crushed candy canes.
- Roll out both doughs into a rectangle a 1/4 inch thick.
- Place the peppermint dough on top of the chocolate, and roll into a log. Wrap and chill for at least 2 hours.
- Preheat the oven to 375 degrees. Cut the dough into 1/2 inch slices. Place on a baking sheet 1 inch apart.
- Bake for 12-15 minutes, or until slightly golden and set. Cool on the pan for 5 minutes before moving to a wire rack.
