These scones are our go to breakfast on the go-specifically when we are travelling. They are incredibly tender, flaky, and filled with delicious bacon and cheddar flavor. They are a mess free, utensil free breakfast that is so satisfying and hearty.

Bacon Cheddar Chive Scones

Ingredients
- 1/2 cup cold butter (1 stick)
- 2 cups all purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- 1 large egg
- 1 cup buttermilk (plus more for brushing the tops)
- 1/2 cup cheddar cheese, shredded (plus more for the tops)
- 6 slices bacon, chopped
- 1 Tbsp. chives or green onions
Directions
- Combine the flour, baking powder, baking soda, salt, pepper, garlic powder, and smoked paprika in a large bowl. 2.Grate the stick of butter into the bowl (or cube very small and cut it in). 3. Combine the buttermilk and egg. 4. Make a well in the flour mixture and pour the buttermilk mixture in. Stir to combine. 5.Fold in the bacon, cheddar, and chives. You should have a slightly sticky, shaggy dough. If needed, add a Tbsp. of milk at a time until the dough comes together. 6. On a lightly floured surface, knead the dough together until all of the ingredients are combined into a nice ball shape. 7. Flatten into a 1 inch round disc, and cut into 8 wedges. 8. Place on a parchment lined sheet pan, and brush with milk, and top with a little cheddar cheese. 9. Bake at 400 degrees for 16-18 minutes, or until golden brown.
