A gorgeous, classic French sandwich consisting of ham, gruyere, parmesan cheese, and a decadent béchamel sauce. Toasted to crispy, melty perfection.

Ingredients
- 1/4 cup butter
- 1/4 cup all purpose flour
- 1 cup whole milk
- 1 tsp. Dijon mustard
- 1/4 tsp. nutmeg
- salt and pepper to taste (about 1/4 tsp. each)
- 8 slices sandwich bread
- 1/2 pound baked ham
- 6 ounces grated gruyere cheese
- 1/4 cup parmesan cheese
Directions
1.In a small saucepan over medium heat, melt the butter. Whisk in the flour until fully incorporated. Pour in the milk, whisking constantly. Add in the mustard, nutmeg, and salt and pepper. Cook, whisking until thickened, about 3 minutes. (It should coat a spoon) 2. Preheat oven to 425 degrees F. Line a sheet pan with foil and brush with vegetable oil, or cooking spray. Place 4 slices of bread down. Top with about 1/4 cup béchamel (enough to coat bread crust to crust). Evenly distribute ham among sandwiches (about 2 slices each). Top with half the gruyere and parmesan, then remaining bread slices. To the tops of the sandwiches, add the remaining béchamel, then gruyere and parmesan. 3. Bake in oven for 5-6 minutes, or until crispy and starting to brown. Turn on broiler and broil the tops for 2-3 minutes, or until the cheese is golden brown and bubbling. Serve with a nice side salad. (You can also pack these for lunches and eat cold!)
