Sleepy Hollow's Sweet and Spicy Chicken Waffle Sandwich

A crispy fried chicken, tossed in a sweet and spicy glaze. Served with a honey mustard broccoli slaw on a soft, golden waffle.

Ingredients
- For the Glaze:
- 1/2 cup honey
- 1 tsp. sriracha
- 1 tsp. orange juice For the Honey Mustard Dressing:
- 2 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 1/4 cup apple cider vinegar
- 1 tsp. lemon juice
- 1/4 cup olive oil
- 1/4 tsp. each salt and pepper (or to taste)
- 4 cups broccoli slaw mix For the Waffles:
- 3 cups flour
- 3 Tbsp. sugar
- 6 tsp. baking powder
- 1 1/2 tsp. salt
- 2 1/4 cups milk
- 3 eggs
- 1 1/2 tsp. vanilla
- 1/2 cup butter, melted
- 8 frozen chicken tenders, cooked according to package directions
Directions
- In a small saucepan over med-low heat, add the honey, sriracha, and orange juice, whisking to combine. Cook until thickened and heated through. Set aside.
- Add all of the honey mustard ingredients to a bowl or mason jar. Shake to combine. Add 1/2 cup of the dressing to a bowl with the broccoli slaw. Toss to combine.
- To make the waffles, combine the flour, sugar, baking powder, and salt in a large bowl. Add in the milk, eggs, melted butter, and vanilla. Whisk to combine, but don’t overmix!
- Preheat a waffle iron and add 1/2 cup batter for each waffle. Cook the waffles until golden brown. This recipe makes 10-12 waffles. (We like to freeze the rest for easy breakfasts!)
- To assemble the sandwich, top the waffle with 1/2 cup broccoli slaw. Toss 2 chicken tenders per sandwich in the warm glaze. Add to the waffle, and enjoy! We like to serve ours with kettle chips, just like they do at Sleepy Hollow!
