Capt. Cook’s Thai Coconut Meatballs | Disney Copycat Recipe!

All beef, garlicky, spicy meatballs in a sweet, creamy coconut sauce, served over white rice.

Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 2 Tbsp. to 1/4 cup sambal garlic chili sauce (more or less depending on how spicy you’d like them)
  • 1/2 tsp. salt, 1/4 tsp. pepper (to taste)
  • 1 and 1/2 c. chicken broth
  • 14.5 oz. can diced tomatoes
  • 1 Tbsp. lime juice
  • 13.5 oz. can coconut milk
  • 2 cups whole milk
  • 1 cup brown sugar
  • 1/4 cup fish sauce
  • 1/2 cup heavy cream
  • white rice and green onions, for serving

Directions

  1. In a large bowl, combine the ground beef, egg, chili garlic sauce, breadcrumbs, and salt and pepper. Stir to combine. Form meatballs about the size of a golf ball (about 1/8 cup of the mixture). Place on a parchment lined sheet pan.2. Bake in a 350 degree F. oven for 25 minutes. 3. Meanwhile, in a stock pot over medium heat, add the chicken stock, diced tomatoes, lime juice, brown sugar, and fish sauce. Stir to combine. 4. Add in the coconut milk and whole milk. Bring to a boil, and turn the heat to low to simmer for 15 minutes. 5. While the pot is still on low heat, stir in the heavy cream. Add in the cooked meatballs, and allow to simmer an additional 10 minutes. 6. Serve over white rice and sprinkle with green onions. Enjoy!
