Easy Breakfast Stromboli | Perfect for Brunch or Make-Ahead Breakfast!

What happens when an Italian classic meets your favorite Saturday morning breakfast? You get this! A crispy, golden brown crust wrapped around a gooey, savory filling of eggs, bacon, and melted cheese. Forget a fork-this is the Breakfast Stromboli!

Breakfast Stromboli

Ingredients
  

  • 5 eggs, divided
  • 1/4 cup whole milk
  • salt and pepper
  • 1 TBSP butter
  • 1 tube pizza dough (or a ball of pizza dough)
  • 8 slices bacon, cooked and chopped
  • 6 slices American cheese
  • 1 cup cheddar cheese, shredded
  • everything bagel seasoning

Instructions
 

  • Preheat oven to 375 degrees.
  • In a bowl, whisk together the 4 eggs, milk, salt and pepper.
  • In a non stick skillet over medium low heat, melt the butter and add the eggs. Cook, stirring occasionally, until the eggs are cooked to your liking.
  • Roll out the pizza dough. Lay the American cheese down, leaving a 1 inch border around the outside.
  • Add the eggs, bacon, and then the cheddar cheese.
  • Whisk the remaining egg in a small bowl, and brush the egg all around the edges of the dough.
  • Roll it up into a long tube shape. Pinch the seams together.
  • Place the stromboli seam side down on a parchment lined baking sheet.
  • Brush all over with the egg wash. Cut a few slits in the top.
  • Sprinkle with everything bagel seasoning.
  • Bake 25-30 minutes, or until golden brown. Let cool for 5-10 minutes, then cut into 2-3 inch slices.
