In the Fall, life starts to get hectic for us between the start of the school year and upcoming holidays, so I like to meal prep easy, grab and go breakfasts that are not only nutritious but delicious and satisfying to start the day off right! We will be making egg sandwiches, overnight oats, French toast sticks, Greek yogurt bagels, and morning glory muffins!

Freezer Friendly Egg Sandwiches

Ingredients

  • 6 large eggs
  • 6 pieces of sausage, turkey sausage, bacon, cooked( or veggies)
  • 6 English muffins
  • 6 slices cheese
  • salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees F. 2. Grease a large casserole dish. Whisk together the eggs and pour in dish. Season with salt and pepper. 3. Add meat or veggies. Bake for 12-15 minutes or until eggs are cooked through. 4. Once cooled, use a cup and cut out 6 egg rounds. 5. Place on english muffins and top with cheese. 6. Wrap in foil or plastic wrap, and refrigerate for 4-5 days or freeze for up to 3 months.

Overnight Oats

Ingredients

  • 1 cup old fashioned oats
  • 1 Tablespoon chia seeds
  • 1/2 cup Greek yogurt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 Tablespoons syrup or honey

Directions

  1. Divide all of the ingredients between 2 jars, and stir. Place the lid on and refrigerate overnight, or up to 3 days. Some of our favorite add ins: Peanut Butter and Jelly: 2 Tablespoons peanut butter and 2 Tablespoons jelly or jam. Blueberry Pie: 1/2 cup blueberries, 1 Tablespoon brown sugar, 1 teaspoon cinnamon. Tropical: 1/2 cup chopped pineapple, 1/4 cup coconut flakes

Freezer Friendly French Toast Sticks

Ingredients

  • 8 slices bread, cut in 3 strips
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3 Tablespoons sugar
  • 1 teaspoon cinnamon
  • pinch salt
  • butter for pan

Directions

  1. Combine the eggs, milk, vanilla, sugar, cinnamon, and salt in a shallow dish. 2. Dip the bread slices into the egg mixture, and place in a nonstick skillet over medium heat with some butter. 3. Cook 2 minutes per side or until cooked through. 4. Serve with syrup.

Greek Yogurt Bagels

Ingredients

  • 2 cups all purpose flour
  • 2 cups greek yogurt
  • 4 teaspoons baking powder
  • 2 teaspoons salt
  • 1 egg, whisked
  • Any bagel toppings (optional)

Directions

  1. Combine the flour, baking powder, and salt in a bowl. 2. Fold in the yogurt. 3. Knead the dough together until no longer sticky, about a minute. 4. Divide into 8 pieces. 5. Roll into a ball and poke a hole in the center to form a bagel shape. 6. Place on a parchment lined baking sheet. Brush with egg wash and add any toppings. 7. Bake at 375 degrees F. for 16-18 minutes or until golden brown.

Morning Glory Muffins

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/2 cup applesauce
  • 1 teaspoon vanilla
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 cups shredded carrots
  • 1 cup shredded peeled apple
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut flakes

Directions

  1. Combine the flour, baking soda, cinnamon, nutmeg, and salt in a large bowl. 2. Combine the eggs, oil, vanilla, applesauce, honey, and brown sugar in a separate bowl. 3. Fold together the dry and wet ingredients. 4. Stir in the carrots, apple, raisins, walnuts, and coconut flakes. 5. Scoop into muffin tins, up to the top. 6. Bake at 375 degrees for 25- 30 minutes, or until a toothpick inserted in the center comes out clean.
