
Today we are doing a simple back to school/start of fall meal prep! Even if the school year doesn’t pertain to you, I find the start of seasons as a chance of renewal and starting fresh! Summer was filled with lots of fun, delicious treats, and rest and relaxation (as it should be!). But, it’s time to get back into the saddle.
When my husband is back to work, it’s a little harder for me to find time to prepare myself good, nutritious meals. So today we are focusing on breakfasts and snacks, because they are the most crucial for me to keep hunger at bay, and be my best self!


DIY Instant Oatmeal Packets
Ingredients
Basic Recipe
- 1/3 cup instant oats
- 1 tsp chia seeds
- 1 tsp flax seeds
- 2-3 tsp brown sugar (or to taste) you can also omit and add honey or maple syrup after cooking
- pinch salt
- 1/4 tsp cinnamon
Cinnamon Raisin
- 3/4 tsp cinnamon
- 2 TBSP raisins
Strawberries and Cream
- 2 TBSP freeze dried strawberries
- 2 tsp dried milk powder
Chocolate Peanut Butter Cup
- 1 TBSP PB2 powder
- 1 TBSP hot cocoa mix
Instructions
- Combine the basic recipe ingredients in a bag or jar. Add in any additional toppings.
- To cook: Pour 3/4 cup boiling water on top of the mix in a bowl. Let stand 1 minute.
- OR Pour 3/4 cup cold water on top. Mix, and microwave for about 1 minute.


Perfect Hard Boiled Eggs
Ingredients
- 4 eggs
Instructions
- In a saucepan, add the eggs and cover with water.
- Place on the stove and turn the heat to medium high. Bring to a boil.
- Once boiling, turn the heat off, and cover with a lid.
- Let sit and cook for 12 minutes. (If you like your eggs jammy, more like 8-9 minutes).
- Drain the hot water off, and add ice water to the pot. Crack the eggs on the top and bottom and let sit in the ice water for 5 minutes. Then peel.
- Store for 3-5 day in an airtight container in the refrigerator.


Protein Ranch Dip
Ingredients
- 1 cup low fat Greek yogurt (like FAGE 0%)
- 3-4 TBSP ranch powder
Instructions
- Combine the yogurt and ranch powder in a bowl. Serve with celery, carrots, and chips!


Cold Brew Green Tea
Ingredients
- 1/3 cup honey, or to taste
- 7 green tea bags
- 8 cups water
Instructions
- Place the honey in the bottom of a pitcher or jug. Add in the tea bags and water. Stir until the honey is dissolved.
- Refrigerate for 6 hours to overnight. Remove tea bags and enjoy!
