Today we are making 5 more easy summer sheet pan dinners! So here’s what’s on the menu: Sheet Pan Hot Honey Chicken and Zucchini, Sheet Pan Meatball Steak Frites, Sheet Pan Italian Sub Sandwiches, Sheet Pan Buttery Cracker Crusted Fish, and Sheet Pan Cheeseburgers and Fries!

Sheet Pan Hot Honey Chicken with Zucchini

Ingredients
  

  • 1 pound chicken breast, cubed
  • 2 zucchinis, sliced in half moons
  • 1/2 cup hot honey (or honey with crushed red pepper in it)
  • 3 cloves garlic, minced
  • 1 TBSP soy sauce
  • 2 TBSP olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • green onions, and cooked rice, for serving (optional)

Instructions
 

  • Preheat oven to 400 degrees.
  • Combine the hot honey, garlic, soy sauce, salt, pepper, paprika, 1 TBSP oil.
  • Pour half of the marinade on the chicken, and set aside for 30 minutes (optional).
  • Toss the zucchini in oil, and season with salt and pepper. Place on a sheet pan. Place the chicken on the other side.
  • Bake for 20 minutes. Brush the remaining marinade on the chicken. Bake an additional 10 minutes.

Sheet Pan Meatball Steak Frites

Ingredients
  

Meatballs

  • 1 1/2 pounds ground beef
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup milk
  • 4 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 TBSP fresh parsley

Fries

  • 3 russet potatoes, peeled and cut into 1/4 inch fries
  • 3 TBSP olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Sauce

  • 1 packet brown gravy mix
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 1/2 TBSP black pepper, freshly ground

Instructions
 

  • Soak the potatoes for 30 minutes in cold water. Drain, and pat dry.
  • Preheat the oven to 375 degrees. Toss the fries in oil, salt, pepper, and garlic powder. Place on a large baking sheet. Bake for 20 minutes.
  • Meanwhile, combine all of the meatball ingredients in a large bowl. Form into golf ball sized meatballs.
  • Turn the oven up to 425 degrees. Turn the fries, and push to one side of the pan. Add the meatballs, and cook an additional 30 minutes.
  • To make the sauce, combine the gravy packet with water and heavy cream. Whisk, and cook for 1 minute (or according to package directions). Add in the black pepper. Serve on the side of the meatballs and fries.

Sheet Pan Buttery Cracker Crusted Fish

Ingredients
  

  • 4 tilapia filets
  • 2 TBSP butter, melted
  • 1 cup butter crackers (like Ritz), crushed
  • 1/4 cup fried onions
  • 1 tsp lemon zest
  • 2 TBSP Dijon mustard
  • 1/2 tsp old bay
  • 1/2 tsp garlic powder
  • 1 head broccoli, chopped into florets
  • 2 TBSP oil, divided
  • salt and pepper
  • 1/2 tsp garlic powder
  • lemon wedges, for serving

Lemon Dill Sauce

  • 1/2 tsp lemon juice
  • 1 TBSP fresh dill
  • 1/4 cup sour cream
  • 1/4 tsp garlic powder
  • salt and pepper

Instructions
 

  • Preheat oven to 425 degrees. Place the fish on a sheet pan, and pat dry.
  • Combine the lemon zest, mustard, old bay, garlic powder, and 1 TBSP oil. Brush on top of the fish.
  • Combine the melted butter, crushed crackers, and fried onions. Divide on top of the fish, and press lightly to adhere.
  • Place the broccoli on the other side of the pan. Drizzle with remaining oil, salt, pepper, and garlic powder.
  • Roast 10-15 minutes, or until fish is golden brown and cooked through.
  • Combine the lemon dill sauce ingredients in a small bowl, and serve on the side for dipping, along with lemon wedges.

Sheet Pan Italian Sub Sandwiches

Ingredients
  

  • 2 TBSP butter
  • 12 slices bread
  • 1/4 pound ham
  • 1/4 pound salami
  • 1/4 pound pepperoni
  • 1/4 pound sliced mozzarella
  • 1/4 pound sliced provolone
  • 1 cup baby spinach
  • 4 ounces pepperoncini peppers, diced
  • 1/4 cup parmesan
  • 2 TBSP fresh parsley

Instructions
 

  • Preheat oven to 400 degrees. Line a baking sheet with foil. Brush half the butter on foil. Lay 6 slices of bread down on the butter. Top with mozzarella cheese, ham, spinach, salami, pepperoni, pepperoncini, and provolone cheese.
  • Top with remaining bread, and brush with butter.
  • Take another sheet pan, and place on top to keep the sandwiches weighed down.
  • Bake for 10 minutes. Remove the pan, and bake an additional 20 minutes.
  • Garnish the tops with parmesan and fresh parsley.

Sheet Pan Cheeseburgers and Fries

Ingredients
  

  • 1 pound ground beef (or 4 burger patties)
  • 4 TBSP butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 4 slices cheese
  • burger buns and your favorite toppings

Fries

  • 2 large sweet potatoes (or russets) , cut into wedges
  • 2 TBSP olive oil
  • salt and pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Line baking sheet with foil. Form burger patties. Season with salt, pepper, and garlic powder. Make an indent in the center of burgers, and place a TBSP butter on each burger.
  • Place on sheet pan. Place wedges on the other side of the pan. Drizzle with oil, and season with salt and pepper.
  • Bake for 40 minutes, flipping fries half way. Top burgers with cheese, and bake an additional 3 minutes.
