
Indulge in Disney magic with our Mickey Churro Cookies recipe; one of our favorite sweet treats at Disney World. These cookies are incredible; buttery cinnamon shortbread topped with creamy cinnamon sugar frosting, and crunchy gold sprinkles. We can’t go to Disney without getting one (or three) of these to take back to the hotel as an after dinner treat.


Mickey Churro Cookies
Ingredients
- 3/4 cup softened butter
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 1/2 tsp vanilla extract
- 2 large eggs
- 2 1/2 cups all purpose flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/4 tsp salt
Cinnamon Sugar Frosting
- 1/4 cup softened butter
- 2 TBSP brown sugar
- 1 cup powdered sugar
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1-2 TBSP milk
- gold sprinkles, for decoration
Instructions
- In a large bowl or stand mixer, cream the butter until smooth. Add in the sugar and brown sugar. Mix until light and fluffy, 3-5 minutes.
- Add in the eggs and brown sugar. Stir until combined, scraping the sides and bottom of the bowl in between.
- Next, add in the flour, baking powder, cinnamon, and salt. Stir until combined.
- Wrap up in plastic wrap or a bowl, and refrigerate for at least 1 hour to firm up.
- Preheat the oven to 400 degrees.
- On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut out the shapes using a Mickey cookie cutter. Place on a parchment lined baking sheet, 2 inches apart.
- Bake for 6-8 minutes, or until lightly golden on the edges. Allow to cool 5 minutes on pan, before transferring to a wire rack.
Cinnamon Sugar Frosting
- In a mixing bowl or food processor, combine the butter, brown sugar, and cinnamon until smooth. Add in the powdered sugar, vanilla. Add milk a TBSP at a time to achieve desired thickness. Add gold sprinkles on top.
