Mickey Churro Cookies

Ingredients
  

  • 3/4 cup softened butter
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 1/2 tsp vanilla extract
  • 2 large eggs
  • 2 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp salt

Cinnamon Sugar Frosting

  • 1/4 cup softened butter
  • 2 TBSP brown sugar
  • 1 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1-2 TBSP milk
  • gold sprinkles, for decoration

Instructions
 

  • In a large bowl or stand mixer, cream the butter until smooth. Add in the sugar and brown sugar. Mix until light and fluffy, 3-5 minutes.
  • Add in the eggs and brown sugar. Stir until combined, scraping the sides and bottom of the bowl in between.
  • Next, add in the flour, baking powder, cinnamon, and salt. Stir until combined.
  • Wrap up in plastic wrap or a bowl, and refrigerate for at least 1 hour to firm up.
  • Preheat the oven to 400 degrees.
  • On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut out the shapes using a Mickey cookie cutter. Place on a parchment lined baking sheet, 2 inches apart.
  • Bake for 6-8 minutes, or until lightly golden on the edges. Allow to cool 5 minutes on pan, before transferring to a wire rack.

Cinnamon Sugar Frosting

  • In a mixing bowl or food processor, combine the butter, brown sugar, and cinnamon until smooth. Add in the powdered sugar, vanilla. Add milk a TBSP at a time to achieve desired thickness. Add gold sprinkles on top.
