In a large bowl or stand mixer, cream the butter until smooth. Add in the sugar and brown sugar. Mix until light and fluffy, 3-5 minutes.
Add in the eggs and brown sugar. Stir until combined, scraping the sides and bottom of the bowl in between.
Next, add in the flour, baking powder, cinnamon, and salt. Stir until combined.
Wrap up in plastic wrap or a bowl, and refrigerate for at least 1 hour to firm up.
Preheat the oven to 400 degrees.
On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut out the shapes using a Mickey cookie cutter. Place on a parchment lined baking sheet, 2 inches apart.
Bake for 6-8 minutes, or until lightly golden on the edges. Allow to cool 5 minutes on pan, before transferring to a wire rack.
