Sheet Pan Easter Dinner | Ready in 1 Hour!

Today we are making my Sheet Pan Easter Dinner! Ready in 1 hour from start to finish, this dinner has minimal prep or clean up, but still has the best parts of a classic Easter meal. Pineapple glazed ham, cheesy au gratin potatoes, and honey glazed carrots for four! You can even double the recipe on 2 sheet pans to serve a bigger crowd. Serve some warm rolls on the side, and you’ve got a meal sure to impress while getting to spend more time with loved ones!

Ingredients
  

Honey Glazed Carrots

  • 1 pound baby carrots, or carrots cut in 2 inch matchsticks
  • 1 TBSP olive oil
  • 1 TBSP honey
  • 1/2 TBSP melted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp thyme

Au Gratin Potatoes

  • 3 cups gold potatoes, peeled and thinly sliced
  • 2 TBSP butter
  • 2 TBSP flour
  • 1 cup whole milk
  • 1/2 tsp garlic powder
  • 1/2 tsp. thyme
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 3/4 cup shredded cheddar cheese, divided
  • 3 TBSP parmesan cheese

Pineapple Glazed Ham

  • 3 7 ounce ham steaks, cut in half (or 1 1/2 lb sliced ham)
  • 1 can pineapple rings (save the juice)
  • 1/4 cup brown sugar
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp garlic powder

Instructions
 

  • Preheat oven to 425 degrees. Line a large baking sheet with foil or parchment.
  • Place the carrots on 1/3 of the pan. Drizzle with oil, and season with some salt and pepper.
  • In a medium saucepan over medium heat, melt the 2 TBSP butter. Whisk in the flour. Cook for 30 seconds, then stir in the milk. Add the garlic powder, thyme, salt, and pepper.
  • Bring to a simmer, and add the potatoes. Cook for 10-15 minutes, or until potatoes are tender and sauce is thickened.
  • Stir in 1/2 cup cheddar cheese, and spread onto the center of the pan. Sprinkle on the remaining cheddar cheese and parmesan.
  • On the other side of the pan, alternate and layer the ham slices with pineapple rings.
  • In a small bowl, combine the pineapple juice with the brown sugar, mustard, salt, and garlic powder. Pour all over the ham.
  • Bake for 20-25 minutes, or until the carrots are tender, potatoes are bubbling, and ham is warmed through.
  • Mix the melted butter, honey, salt, pepper, and thyme. Drizzle over the hot carrots.
