Welcome to the new series I will be doing during Flower and Garden Festival at Epcot! Creating copycat recipes of our favorite Flower and Garden treats, every Friday! Starting off with the famous Cinnamon Roll Bites from Brunchcot. This recipe is a quick and easy version since there are many different parts to this delicious treat. I hope you enjoy!

EPCOT'S Fried Cinnamon Roll Bites (Copycat)

Ingredients
- 1 can of biscuit dough (8 biscuits)
- 1 cup granulated sugar
- 1 teaspoon cinnamon
- oil, for frying
- For the Filling:
- 1 package of instant pudding mix (chocolate or vanilla)
- 1 teaspoon of cinnamon
- For the Icing:
- 2 ounces cream cheese, softened
- 2 Tablespoons butter, softened
- 1/2 teaspoon vanilla extract
- 1 cup confectioners sugar, sifted
- 2 Tablespoons half and half
- 2 slices of bacon, cooked
- 1 teaspoon maple syrup (optional)
Directions
- Heat oil in a pot over medium heat until it reaches 375 degrees. 2. Meanwhile, cut the biscuits and half and soften the cut edges so they form ovals. 3. Combine the granulated sugar and 1 teaspoon of cinnamon on a plate or bowl. 4. Fry the biscuits until golden brown, about 2 minutes per side. Immediately toss in the cinnamon sugar. Set aside on a wire rack to cool. 5. Using a stand mixer or hand mixer, combine the cream cheese and butter until smooth. Add in the vanilla, and then half of the confectioners sugar. Continue to alternate with the half and half and sugar until combined 5. Combine the cinnamon with the dry pudding mix, and make according to the package directions. 6. Using a piping bag or ziplock bag, place a piping tip in the end and place half of the pudding in the bag (save the rest for a tasty snack!). Pierce each donut on the side with the piping tip and squeeze in about a tablespoon of the pudding into each one *If you don’t have a piping tip, cut the corner off of the bag, and use a pairing knife to make a small hole in each donut before piping it in. 7. Drizzle the tops of each donut with the cream cheese frosting, and top with the bacon. 8. For the candied bacon, drizzle the maple syrup on top of the bacon and chop up into tiny pieces. You can also leave the bacon as is for a more sweet and salty treat.
