
Today we are making my Christmas Vacation Movie Menu. It is tradition for my family to watch it on Thanksgiving, and easily one of our favorite movies. We will be making Clark’s Eggnong, Margot’s “MY CARPET!” Mimosas, Jelly of the Month Club Dip, Ellen’s Smokin’ Chopped Salad, “It’s a Little Dry” Turkey Pot Pie, and Twinkling Lights Cupcakes!


Clark’s Eggnog
Simply Clark's eggnog. Make it Eddie's by adding a shot of spiced rum!
Ingredients
- 2 cups eggnog
- 3 ounces spiced rum (optional)
Instructions
- Pour the eggnog into some moose mugs, and make it Eddie's Eggnog with a shot of spiced rum!


Margo’s “MY CARPET!” Mimosas
A fun, festive twist on the champagne that gets spilled all over poor Margo's carpet
Ingredients
- 4 cups champagne
- 1 cup cranberry juice
- fresh cranberries (optional)
Instructions
- Freeze cranberries in water in an ice cube tray for garnish.
- Pour 1 cup of champagne and 1/4 cup of cranberry juice in each champagne flute. Serve with ice cubes.


Jelly of the Month Club Dip
In honor of Clark's Jelly of the Month Club certificate. Sweet and spicy pepper jelly over a goat cheese blend.
Ingredients
- 8 ounces cream cheese, softened
- 4 ounces goat cheese, softened
- 1 Tablespoon honey
- 1/2 teaspoon salt
- 1/3 cup pepper jelly
- 1 Tablespoon diced green onions
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine the cream cheese, goat cheese, honey, and salt. Whip together with a whisk or hand mixer.
- Spread into a small grease casserole dish.
- Spread the pepper jelly on top.
- Bake for 10 minutes, or until melted and bubbling.
- Sprinkle chives on top.


Ellen’s Smokin’ Chopped Salad
In honor of the scene where Ellen violently chops the lettuce in half, this chopped salad is festive with dried cranberries, goat cheese, apples, and pecans.
Ingredients
- 4 cups iceberg or romaine lettuce, chopped
- 1 apple, chopped
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
- 4 slices cooked bacon, chopped
- 4 ounces goat cheese, crumbled
Dressing
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 1 Tablespoon maple syrup
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
Instructions
- In a bowl or mason jar, combine all of the dressing ingredients, and shake (or whisk) to combine.
- In a serving bowl, add the lettuce, and top with remaining ingredients. Drizzle with some dressing, or serve on the side.


“It’s a Little Dry” Turkey Pot Pies
Katherine's turkey was more than a little dry, but these turkey pot pies liven it up again with a delicious gravy sauce and mixed vegetables.
Ingredients
- 4 9 inch pie crusts
- 3 Tablespoons butter
- 2 cups frozen mixed vegetables
- 1 Tablespoon flour
- 1/2 cup milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried sage
- 1/4 teaspoon thyme
- 1 cup chicken or turkey gravy
- 2 cups cooked turkey, chopped
- salt and pepper to taste
- egg yolk, for washing
Instructions
- Preheat the oven to 375 degrees.
- In a large skillet over medium heat, melt the butter and add the mixed vegetables. Cook for about 5 minutes, or until softened.
- Sprinkle in the flour, and cook for 15 seconds. Pour in the milk, and stir. Add in the spices and gravy. Cook until thickened. Stir in turkey. Season with salt and pepper.
- Roll out the pie crusts slightly. Cut out 12 (5 inch) circles and 12 (4 inch) circles. (You will need to reroll the scraps a few times to get enough).
- Grease muffin tins, and place the larger 5 inch dough rounds in the bottom of each. Divide the filling between each cup, and place smaller rounds on top. Seal the edges, and brush with egg wash. Cut slits in the top.
- Bake 35-40 minutes, or until golden brown and bubbling.


Twinkling Lights Cupcakes
Cupcakes to honor Clark's thousands of twinkling lights!
Ingredients
- 1 batch chocolate cupcakes (I used a box of cake mix according to directions)
- 1 batch vanilla frosting
- black gel icing
- M&M's
Instructions
- Frost the cupcakes. Using a tube of black gel icing, make a swirl starting in the center and working to the edge.
- Place M&M's all along the "wire".
