Summer Slow Cooker Dinners to Beat the Heat (Part 1)

Let’s make some of my favorite Summer Slow Cooker Dinners! When it’s 80+ degrees outside, I look for any way possible to not turn on my oven and heat up the house any more. The best solution? The slow cooker! Today we are making meatball parm sandwiches, sesame chicken, BBQ beef brisket, Cajun chicken alfredo, and meatloaf with garlicky potatoes and carrots. Happy Summer!

Slow Cooker Cajun Chicken Alfredo

Ingredients

  • 1 1/2-2 pounds chicken breasts, seared (optional)
  • 12 ounces smoked sausage, cut into 1 inch rounds
  • 3 cups heavy cream
  • 4 cups chicken broth
  • 4 Tablespoons butter
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 Tablespoons Cajun seasoning
  • 1 pound penne pasta, uncooked
  • 1/2 cup hot water
  • 1 teaspoon cornstarch
  • 2 cups parmesan cheese
  • salt and pepper, to taste

Directions

  1. Grease crock pot with cooking spray or oil. 2. Add the cream, chicken broth, garlic, and Cajun seasoning, stir. 3. Place the chicken breasts and sausage in the mixture. Cook on low for 4 hours, high for 2-3 hours. 4. Remove the chicken and slice, set aside. 5. Combine the cornstarch and hot water in a cup and add to slow cooker along with pasta. 6. Cook on high for 30 minutes more. 7. Stir in parmesan cheese, chicken, and salt and pepper to taste.

Slow Cooker Meatloaf and Garlic Potatoes

Ingredients

  • 2 pounds meatloaf mix (or ground beef)
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 1 small onion, grated
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon parsley
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Veggies:
  • 1 and 1/2 pounds baby potatoes
  • 1 pound baby carrots
  • 3 Tablespoons melted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • For the Topping:
  • 1/2 cup ketchup
  • 2 Tablespoons brown sugar
  • 1 Tablespoon red wine vinegar

Directions

  1. To make the meatloaf, combine the meat, eggs, breadcrumbs, onion, Worcestershire, garlic powder, parsley, oregano, basil, and salt and pepper. Form into a loaf shape. Spray a piece of aluminum foil with cooking spray, and wrap around the sides of the meatloaf. Place in the center of the slow cooker. 2. Combine the melted butter with garlic and salt. Toss in the potatoes and carrots. Place around the sides of the meatloaf. 3. Cook for 6-8 hours on low, 3-4 hours on high. 4. Combine the topping ingredients in a small bowl and brush on the meatloaf. Cook an additional 30 minutes. 5. Slice and serve!

Slow Cooker Beef Brisket

Ingredients

  • 3-4 pounds beef brisket
  • 1 cup beef stock
  • 2 Tablespoons Worcestershire sauce
  • 1/4 teaspoon liquid smoke
  • 1/2 cup BBQ sauce
  • For the Spice Rub:
  • 1 Tablespoon brown sugar
  • 1 Tablespoon smoked paprika
  • 1 Tablespoon chili powder
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper

Directions

  1. Combine the spice rub in a small bowl. 2. Trim any excess fat from the brisket, and spread the spice rub all over. Allow to sit at room temperature for 15-20 minutes. 3. Grease the crock pot with cooking spray. Add the beef stock, Worcestershire sauce, liquid smoke, and BBQ sauce. Place the brisket into the liquid. Cook on low for 6-8 hours. 4. Spread more BBQ sauce on the top. Allow to cool for 15 minutes before slicing.

Slow Cooker Sesame Chicken

Ingredients

  • 1 1/2- 2 pounds chicken breast, cut in 1 inch chunks
  • 1/4 cup soy sauce
  • 1/3 cup honey
  • 2 Tablespoons ketchup
  • 1 Tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon sriracha (optional)
  • 2 Tablespoons water
  • 2 Tablespoons cornstarch
  • green onions and sesame seeds, for serving

Directions

  1. Grease the slow cooker pot with spray or oil. 2. Combine the soy sauce, honey, ketchup, sesame oil, garlic, and sriracha. Stir the chicken into the sauce. 3. Cook on low for 4 hours. 4. Combine the water and cornstarch in a cup, and add to the slow cooker. Cook 30 minutes more on high. 5. Top with sesame seeds and sliced green onions.

Slow Cooker Meatball Parm Sandwiches

Ingredients

  • 1 1/2 pounds ground beef (lower fat recommended)
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1 teaspoon Worcestershire sauce
  • 24 ounces marinara sauce
  • 6 Sub Rolls
  • 12 Slices mozzarella cheese
  • fresh basil, for serving

Directions

  1. Combine the beef, onion, garlic, parmesan, garlic powder, oregano, basil, salt, pepper, eggs, and Worcestershire in a bowl. Use a 1 1/2 Tbsp. scoop and roll the meatballs. 2. Grease a crockpot with cooking spray and place meatballs in the bottom, layering if needed. 3. Pour sauce on top. 4. Cook on high 3-4 hours or low for 5-7 hours. 5. Toast sub rolls in toaster oven or under broiler. 6. Place meatballs on roll and top with cheese and basil. Place back in toaster oven or under broiler, if needed.
