Ingredients
- 1 package puff pastry (2 sheets), thawed
- 2 cups fresh peaches, peeled and diced
- 1 Tablespoon lemon juice
- 2 Tablespoons butter
- 1/4 cup sugar
- 2 Tablespoons brown sugar
- 2 teaspoons cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 egg + 1 Tbsp. water, whisked
Directions
- In a medium saucepan over medium low heat, combine the peaches, lemon juice, butter, sugar, brown sugar, cornstarch, vanilla, and cinnamon. Cook, stirring occasionally for 5-7 minutes, or until bubbling and thick. Set aside to cool. 2. Cut each puff pastry sheet into 4 squares. 3. Place 2-3 Tbsp. of the peach filling in the center of each square. 4. Brush the edges of each square with the egg wash. Fold each over into a triangle. 5. Use a fork to press and seal the edges together. Brush the tops with more egg wash. Place on a sheet pan lined with parchment paper, about 2 inches apart. 6. Preheat oven to 400 degrees F. Bake for 20-25 minutes, or until golden brown and bubbling.
