
We always have lots of leftovers after Thanksgiving, so over the years I’ve created some fun ways to use them up! Firstly, don’t throw away your turkey bones, they make the most incredible stock. It’s super easy to do, and makes tons of stock to use for soups all winter long. We will also be making Thanksgiving pizza and Turkey and Stuffing Waffles!


Easy Turkey Stock
This turkey stock is super easy to make and creates the most delicious and nutritious stock for soups!
Ingredients
- 12-14 pound turkey carcass
- any leftover turkey drippings (optional)
- 1 large onion, quartered
- 4-5 cloves garlic, crushed
- 1 cup carrots
- 1 cup celery
- 1/2 cup fresh parsley, sage, rosemary, thyme bunches or anything extra you have on hand
- 10 whole peppercorns
- water, to cover (about 4 or 5 quarts)
Instructions
- In a large pot, combine all of the ingredients and cover with water. (It's okay if some things are sticking out at first).
- Place on the stove over high heat, and bring to a rolling boil. Reduce the heat to low, and simmer the stock for 2-4 hours. (The longer the richer the stock).
- Pour through a fine mesh strainer, and cool.
- I like to divide mine into mason jars and pop them in the freezer for an easy starter for any soup!


Thanksgiving Pizza
A great way to use up Thanksgiving leftovers!
Ingredients
- 1 large pizza dough
- 1/2 cup gravy
- 1 cup diced cooked turkey
- 2 cups shredded mozzarella cheese
- 1/2 cup cooked stuffing
- 1/4 cup mashed potatoes
- 1/4 cup cranberry sauce
- 1/4 cup French fried onions
Instructions
- Preheat the oven to 450 degrees. Stretch the pizza dough out on a pan sprinkled with flour.
- Spread the gravy on the dough. Sprinkle on the turkey, and then the cheese.
- Add the stuffing, and dollop on the mashed potatoes.
- Warm the cranberry sauce so it is easier to drizzle, and add on the pizza. Sprinkle on the fried onions.
- Bake for about 18-20 minutes, or until golden brown and bubbling.


Turkey and Stuffing Waffles
These waffles are crispy on the outside and soft and fluffy on the inside. Serve with gravy and cranberry sauce!
Ingredients
- 4 cups cooked stuffing
- 1 cup diced turkey
- 2 eggs
- 3 Tablespoons parmesan cheese
- 2-3 Tablespoons chicken stock
Instructions
- In a large bowl, combine the stuffing, turkey, eggs, parmesan, and chicken stock (start with 2 TBSP. and add more if needed). The mixture should hold together when squeezed.
- Preheat waffle maker, and take 1/4 cup scoops of the mixture, pressing into the waffle maker. Cook for about 5 minutes, or until golden brown and crispy.
- Serve with gravy and cranberry sauce.
