
Woody's Lunchbox Grilled Cheese and Tomato Soup

Ingredients
- For the Grilled Cheese:
- 8 slices artisan white bread
- 8 slices provolone cheese
- 8 slices cheddar cheese
- 8 slices American cheese
- 1/2 cup mayo
- 1 teaspoon garlic powder
- For the Soup:
- 1 cup onion, diced
- 2 cloves garlic, minced
- 28 oz. can crushed tomatoes
- salt and pepper, to taste
- 1 teaspoon thyme
- 1 Tablespoon dried basil ( 2 Tbsp. fresh basil even BETTER)
- 1 cup chicken stock
- 1/3 cup heavy cream or half and half
Directions
- Combine the mayo and garlic powder in a small bowl. Set aside. 2. Assemble each sandwich with 2 slices of provolone, cheddar, and American cheese. Spread the garlic mayo on the outside of one side of each sandwich. 3. Heat a large skillet over low heat. Place the sandwiches mayo side down in the pan (you may need to do 2 at a time). 4. Spread the mayo on the top sides of the bread. 5. Cook for about 2 minutes, until golden brown on one side, and flip the sandwiches over. Cook for an additional 2-3 minutes, pressing down lightly as they cook, until the cheese is all melty! For the Soup: Place a pot over medium heat with a drizzle of oil in it. Cook the onions until soft and translucent, and add in the garlic. Stir until fragrant, less than a minute. Add in the crushed tomatoes (I like to put a little water in the can and swirl it around to get all of the tomatoes out). Season with salt and pepper, and the thyme and basil. Add in the chicken stock, and allow to cook for about 10 minutes, stirring occasionally. If you want a smooth soup, use a stick blender (or regular blender) to puree the soup. Slowly whisk in cream, and serve!
***NOTE: Disney released a recipe for this grilled cheese back in 2020, and while we tried it and thought it was delicious, we think they may have changed the recipe in the park to something similar to this recipe. On the menu, it is now a Three Cheese Grilled Cheese with provolone, cheddar, and American. We didn’t taste any cream cheese spread when trying it in 2021. Try them both out and let us know what you think!
