Honey Cornbread Poppers
Ingredients
- 1 cup cornmeal
- 1 cup flour
- 1/4 cup sugar
- 1 TBSP baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 2 eggs
- 1/4 cup butter, melted
- 1 cup corn kernels
- 1/2 cup shredded cheddar cheese
Honey Butter
- 2 TBSP butter, melted
- 2 TBSP honey
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
- In a separate bowl, combine the buttermilk, eggs, and butter. Pour into dry ingredients.
- Fold in the corn and cheddar. Scoop into a mini muffin tin about 3/4 of the way full.
- Bake for 12- 15 minutes, or until a toothpick inserted in the center comes out clean.
- Combine the butter and honey. Brush on the tops of the warm muffins.


Cajun Fried Deviled Eggs
Ingredients
- 6 hard boiled eggs
- 1 TBSP mayo
- 1 tsp yellow mustard
- 1 tsp Cajun seasoning
- hot sauce
- 1 cup flour
- 1 egg
- 1 cup panko
- 1 tsp cornstarch
- salt and pepper
- pickled jalapenos or chives
Instructions
- Scoop the yolks out of the whites into a bowl. Mix together with the mayo, mustard, Cajun seasoning, and hot sauce.
- Combine the panko and cornstarch on a plate. Season with salt and pepper. Whisk the eggs in a bowl. Place flour on a separate plate. Dip the whites in the flour, egg, and then panko.
- Heat oil in a deep skillet to 350 degrees. Fry the egg whites for 2-3 minutes per side.
- Pipe the yolks on top of the fried eggs. Top with pickled jalapenos or chives.


Sweet and Spicy Sausage Pineapple Bites
Ingredients
- 1 package kielbasa, sliced into rounds
- 2 cups pineapple chunks
- 1/2 cup brown sugar
- 1/4 cup BBQ sauce
- 2 TBSP honey
- 1 TBSP Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp crushed red pepper
- splash apple cider vinegar
Instructions
- Preheat oven to 400 degrees.
- In a large pan, sear the sausage for a few minutes, or until golden brown.
- Combine the brown sugar, BBQ, honey, Dijon, garlic, crushed red pepper, and apple cider vinegar. Toss the sausage and pineapple into the sauce.
- Pour into a greased baking dish.
- Bake for 20-25 minutes, stirring halfway in between.
- Place a piece of sausage and piece of pineapple on toothpicks. Serve.


Fried Macaroni and Cheese Bites
Ingredients
- 2 cups cooked elbow pasta
- 2 TBSP butter
- 2 TBSP flour
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1 egg
- 1 cup flour
- 1 1/2 cups panko breadcrumbs
- salt and pepper
- oil for frying
Instructions
- In a pot over medium heat, melt the butter. Stir in the flour, and cook for 30 seconds.
- Pour in the milk, and whisk to combine. Slowly add in the cheeses, stirring until melted.
- Season with garlic powder, paprika, dry mustard, salt and pepper.
- Pour over the elbow pasta and mix. Pour onto a sheet pan and refrigerate for 2 hours.
- Place the flour on one dish, panko on another. Season with salt and pepper. Whisk egg in a bowl. Roll balls of the macaroni and cheese, and roll in the flour, egg, and then breadcrumbs.
- Heat oil to 350 degrees and fry for 2-3 minutes per side, or until golden brown.
