Quick & Easy Crispy Baked Fish Sticks

Let’s make my Quick & Easy Crispy Baked Fish Sticks! They are loved by my whole family (even my toddler), much healthier than the fried versions, but do not lack in flavor or crunch. I make big batches and pop them in the freezer for an even quicker lunch or dinner!

Quick & Easy Crispy Baked Fish Sticks

Ingredients

  • 1 cup flour
  • 2 large eggs, whisked
  • 1 Tablespoon dijon mustard
  • 1 cup panko breadcrumbs
  • 1 cup breadcrumbs
  • 1 pound cod filets, cut into 1 inch strips
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon, tartar sauce, or ketchup for serving /recipe-ingredients]

    Directions

    1. Place flour on a plate. 2. Combine the eggs and Dijon in a bowl. 3. Combine the breadcrumbs, garlic powder, parsley, salt and pepper on a separate plate. 4. Dredge the fish pieces in flour, then egg, then breadcrumbs. 5. Place a wire rack on a sheet pan and spray with cooking spray. Place fish on the wire rack, and spray the tops with more cooking spray. 6. Bake at 400 degrees F. for 6-7 minutes, flip, and bake an additional 5-6 minutes.
