Are you ready for the easiest, cutest Halloween treat you’ll make this year? Forget complicated royal icing and fancy techniques, today we’re making Peanut Butter Spider Cookies! These soft, salty, sweet cookies are topped with a Reese’s cup, spooky chocolate legs, and cute little eyes. They’re so simple, even a muggle can make them!
Peanut Butter Spider Cookies
Ingredients
- 1/2 cup butter, room temperature
- 1/2 cup brown sugar
- 1/3 cup sugar
- 3/4 cup peanut butter
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup sugar, for rolling
- 24 mini peanut butter cups, unwrapped and frozen for 30 minutes
- 1/2 cup chocolate chips

Instructions
- Preheat oven to 350 degrees.
- In the bowl of a stand mixer, cream together the butter, sugar, and brown sugar.
- Add in the peanut butter. Stir to combine, and then add in egg and vanilla.
- Mix everything together until combined. Scrape down the sides and bottom of bowl, and mix again.
- Add in the flour, baking soda, baking powder, and salt. Mix until combined.
- Place the 1/4 cup sugar in a bowl. Take 2 TBSP of dough at a time. Roll into a ball, and roll in the sugar. Place on a parchment lined baking sheet about 2 inches apart.
- Bake for 8-11 minutes, or until golden on the edges and set.
- Let cool for 3-5 minutes, then place a peanut butter cup on the top of each one.
- Melt the chocolate chips and add to a piping bag. Cut a small hole in the tip.
- Make 8 legs on each spider, and using a dot of chocolate, stick the eyes on the front of the peanut butter cup. Cool, and let chocolate set.
